Charcoal-Grilled Sugared Ham

Charcoal-Grilled Sugared Ham was one of the first recipes I ever made. I’m not a horseradish lover, but this recipe works! This is a very easy, economical, and tasty way to serve up center-cut ham slices. Hey, this recipe only has 4 ingredients but still packs a great punch.

Obviously you can cook this on your gas grill as well. Ham slices are scored in a diamond pattern, then grilled and basted with a tasty sauce of brown sugar, lemon juice and horseradish. The sauce absorbs into the scored ham for a succulent taste.

I found this recipe in the Betty Crocker cookbook, 1972 edition. That was back in the days when Hibachi grills were the norm – way before gas grills. This does have a wonderful taste if you can grill the ham steaks over charcoal, but I was using an indoor grill so I didn’t this time. If you aren’t used to cooking with horseradish, consider toning it down a little and decrease the amount to one-quarter cup instead of the recommended one-third cup.

I will say that 2 center-cut ham steaks will not provide the 8 servings suggested in this recipe unless you have really small servings or are feeding small children. 4 or 5 servings is probably a more realistic figure. If you’re looking for a great way to serve center-cut ham slices, then consider this delightful option. Charcoal-Grilled Sugared Ham is gluten free.

When I initially posted this recipe right after I began my blog the pictures were still taken with an iPhone for a camera so they weren’t particularly appealing. I’ve been remaking all those first-year blog recipes where I used an inferior camera, and after almost three years on this project I am almost done.

I recently remade Charcoal-Grilled Sugared Ham (November 2016) and served it with Candied Sweet Potatoes. This time I cooked the steak on a gas grill (so it wasn’t really charcoal-grilled). It was still absolutely mouthwatering, however. If you’re looking for a great sauce to make to baste over center-cut ham steaks, this is a terrific one to use.

Here’s a close up so you can see the brown sugar sauce glazed over the top of the ham slices. The basting sauce is comprised of three ingredients! Brown sugar, horseradish, and lemon juice. That’s all!

Score ham slices in a diamond pattern on both sides of the meat.

Here the ham slices are ready to be grilled.

In a saucepan over low to medium heat, combine basting sauce ingredients.

Stir to combine ingredients and bring to a boil so sauce ingredients can thicken. You can see the sauce has cooked down and thickened. I only cooked it about 10 minutes on top of the stove. Then as the sauce cools it thickens in the pan.

Place ham slices on grill. Spread sauce over top of ham steaks. Here you can see the scoring on one side. This allows the basting sauce to work into the ham and accent it with a great flavor.

Baste the ham several times with basting sauce. Cook ham slices about 15 minutes on each side.

Continue basting with horseradish sauce until done. You can see the delicious, gooey brown sugar-horseradish sauce on top of the ham steaks. Charcoal-Grilled Sugared Ham can be prepared in less than an hour!

This is a great entree for Easter dinner, or holidays like Christmas or Thanksgiving if you don’t want to go to the trouble of cooking a turkey. It’s terrific served with Candied Sweet Potatoes.

  • 1 wooden spoon
  • 1 sharp knife to score the ham

Ingredients
  

  • 3 1/2 lbs. fully cooked center-cut smoked ham slices, 1 inch thick about 2 one-inch thick slices
  • 1 cup light brown sugar packed
  • 1/4 cup lemon juice
  • 1/3 cup horseradish

Instructions
 

  • Score each side of ham ¼ inch deep in diamond pattern.
  • Combine remaining ingredients in small saucepan; heat to boiling, stirring constantly.
  • Place ham slices on grill 3 inches from medium coals; cook 15 minutes on each side, basting frequently with brown sugar mixture.

Notes

NOTE: These ham steaks will not need to be cooked as long on each side if you're using a gas grill.
