
Peaches and Bananas

My mom made this simple Peaches and Bananas recipe all the time for us as children. It was one of my most requested recipes. Peaches, bananas, a little sugar, and sometimes strawberries thrown in–but more often than not, just peaches and bananas.

Mom always peeled her peaches but I leave the peel on for more nutrition. I also skip the sugar because I find it’s sweet enough without it. I love this quick and easy fruit salad dish. It’s a great accompaniment to almost any meal. One of the reasons I wanted to post this special recipe is to keep it in our family. Another reason is it’s just so tasty!!
When peaches are in season I still make this a lot. So when I saw a batch of good looking peaches at Sprouts the other day (even though this isn’t the season for them), I determined to make up this favorite recipe. I made this as a side dish the day I made Roast Chicken and Garlic Mashed Potatoes. The flavors of fresh peaches and bananas blended perfectly with the other dishes in that meal.
If you’re looking for a nice, simple side dish for hot summer days this is a great one. Add the bananas just before serving to prevent browning–and only make enough to provide a serving for each person eating because this will not keep beyond that time. On occasion I swish the bananas in lemon juice to prevent discoloration although Mom never did. If you decide to do this the bananas will keep a little longer without browning.
If you eliminate the sugar or substitute honey, you have a healthy, low calorie, clean, gluten free and vegan recipe. Not to mention that it’s so incredibly quick and easy. Enjoy!
When I initially posted this recipe in March 2013, it was before I started using my Canon camera. I’ve been remaking all my first year blog recipes so I can get better display pictures of each one and I recently remade this one (September 2015) as a side dish to a meal I took to friends. This time I added the strawberries because they make the pictures pop, and because they just taste so, so good. 🙂

Peaches and Bananas are a simple and tasty side dish for any meal, but especially great in the summer when peaches are in season.

This is an especially appetizing dish during the hot summer days when you don’t want to heat the kitchen up by cooking in the oven.

Try making Peaches and Bananas for your next backyard barbecue. Just don’t forget to leave off the bananas until right before serving.
Here’s what I did.

I used these ingredients.

Wash peaches. Slice peaches into a serving bowl. Add sliced strawberries. You can refrigerate at this point. Right before serving, add sliced bananas. Stir fruit together and serve.

We love this simple, tasty fruit salad and believe you will enjoy it too.

PEACHES AND BANANAS
(From my mom, Helen Mattis, Titusville, FL)

Peaches and Bananas
Equipment
- 1 large salad bowl or trifle dish
- 1 sharp knife to slice fruit
- measuring cups
- measuring spoons
Ingredients
- 2 large peaches well washed, sliced
- 2 large bananas sliced
- 1 cup strawberries sliced, if desired
- 1/4 cup lemon juice if desired
- 2 tbsp. granulated sugar if desired
Instructions
- Slice peaches in half and remove stone (if freestone peaches, if not, you will have to slice them the hard way with the pit still in the peach).
- Place slices in a medium size bowl.
- Add strawberries and, if desired, add sugar and coat well.
- Refrigerate until ready to serve.
- Just before serving, slice bananas and dip in lemon juice, if desired, to prevent discoloration.
- Stir ingredients to combine.

- About 2 bananas, sliced

We love peaches and this combination of fruit is so refreshing.

You can’t find a salad easier to prepare than this! If you eliminate the sugar it’s totally, healthy, clean, low calorie, gluten free and vegan!
