Coconut Funfetti Cookies
Coconut Funfetti Cookies are some of the most amazing cookies you’ll ever eat! Coconut, funfetti galore, and sugar cookie taste – that’s what these cookies are made of! I loved the coconutty taste in these cookies. That, plus all the sprinkles puts these cookies way over the top. Coconut Funfetti Cookies are scrumptious indeed! Additionally, they are so quick and easy to mix up. In less than 20 minutes you can have your cookies baked and ready to eat.

These cookies turned out fantastic when I made them last week. They had an amazing double coconut taste since I added coconut extract as well as coconut to the batter. I was looking for another way to use up all the sprinkles I had in my pantry and decided to give funfetti cookies a try–but with a slight twist–coconut along with all the sprinkles in the batter.
Oh, my goodness, I could have eaten 10 or 15 of these at a pop! Thankfully, I was making them for a party so I didn’t have the liberty to eat a lot of them!
Like the Funfetti Cake Batter Cookies, Red Velvet Confetti Cookies, and Chocolate Funfetti Cookies, these delicious cookies start with a boxed cake mix. This recipe has both vanilla and coconut extract, along with coconut and a whole cup of rainbow sprinkles.
I do recommend using a higher quality cake mix for this recipe so that you have enough flour in the mixture. Otherwise, the dough may turn out excessively moist and the cookies will flatten out too much while baking.
If you’re looking for a fabulous funfetti cookie and you love the taste of coconut these cookies are to die for! I loved these spectacular cookies and I’m pretty sure you and your family will too! I do recommend that you don’t use non-pareils (the small beaded sprinkles) as they tend to change the color of the cookie dough to lavender.
When I initially posted this recipe in March 2013, my pictures were taken with an iPhone so the clarity and sharpness certainly wasn’t what my Canon can provide. I’ve been remaking all my first-year blog recipes (posted with iPhone pictures), and recently remade this recipe (January 2016). These pictures are much more satisfying. Coconut Funfetti Cookies are so great for holiday baking or tailgating parties. Hope you give them a try.

Coconut Funfetti Cookies are to die for! I love a thick and chewy cookie and these turned out quite drool-worthy!
Coconut Funfetti Cookies are heavenly. The lovely aroma of coconut filled the air as these cookies baked.
Here’s what I did.
I used these ingredients.
Pour cake mix into a mixing bowl. Add baking powder and UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Stir to combine.
Add eggs, coconut, rainbow sprinkles, vanilla and coconut extract.
Add oil and stir ingredients together.
Stir ingredients together.
Scoop mixture with a small cookie scoop and place on cookie sheets sprayed with cooking spray.
Bake at 350 for about 12 or 13 minutes or until cookies are done. These cookies turned out nice and plump.

Each cookie is filled with lots of funfetti sprinkles. I loved the addition of coconut in these cookies.

COCONUT FUNFETTI COOKIES

Coconut Funfetti Cookies
Equipment
- 2 18x26" large cookie sheet pans
- 1 large mixing bowl
- 1 wooden spoon
- 1 large cookie scoop
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
- 1 box Golden Butter Recipe Yellow Cake Mix
- 1/3 cup canola oil or use coconut oil or avocado oil
- 1 tsp. baking powder
- 2 large eggs
- 1 cup coconut
- 1 cup rainbow sprinkles jimmies, not nonpareils
- 1 tbsp. pure vanilla extract
- 1 tsp. coconut extract
Instructions
- Stir cake mix, flour and baking powder with wooden spoon.
- Add eggs, oil, coconut, vanilla, coconut extract and sprinkles and stir until well combined.
- If dough is too moist add a little more flour.
- Scoop with a large cookie scoop and place on cookie sheets sprayed generously with cooking spray.
- Bake about 12-13 minutes or until done.
- Rotate cookie sheets on oven racks half way through baking time.
- Cool.

I’m with you on loving coconut ANYTHING! These cookies were to die for. You can find coconut extract with all the other spices and extracts at the grocery store. It greatly improves the coconut taste. Let me know how they turn out!

You had me at coconut. Yes, must give these a try. Though hubs thinks coconut tastes like soap (yeah, strange), I adore the sweet white flakes, and so do our boys. Three out of four!
