Grilled Swiss Cheese and Tomato Sandwiches have been a family Sunday afternoon favorite for decades. Who doesn’t love grilled cheese sandwiches? I have devoured grilled cheese sandwiches since I was a kid. But my husband, John, has always made them better than my mom or I ever have.

I especially like these delicious sandwiches made with thick-sliced homemade bread or Texas Toast. Ours have lots of tomato slices and plenty of Swiss cheese. John grills them up in cast-iron skillets. If necessary, he covers the skillet with a lid or microwaves the sandwich a few seconds to ensure the cheese melts.

Last week our Pastor’s wife texted me and asked for John’s Grilled Cheese recipe. John had posted up pictures of it several months ago on FaceBook when he made it. Our pastor had a craving for them. After texting back directions I got to thinking about how good these sandwiches are. I decided the next day to make some for ourselves.

I made mine with homemade Seven Grain Bread and the sandwiches turned out SO wonderfully. Grilled Swiss Cheese and Tomato Sandwiches are so simple to make. They’re a great sandwich to make when you don’t have a lot of time to prepare dinner. Or they’re a great accompaniment to your favorite soup like Corn-Chicken-Chili Chowder or Vegan Roasted Tomato Basil Soup.

Grilled Swiss Cheese and Tomato Sandwiches are wonderful to make after ball games. But they’re also pretty terrific for Meatless Mondays, or anytime you get the urge! We have served these sandwiches a lot of times on Sundays after church. They can be made up so quickly, plus, they’re so filling and satisfying. This is a totally delicious and scrumptious grilled cheese recipe. Consider making up a batch of John’s amazing Grilled Swiss Cheese and Tomato Sandwiches. They are superb.

I initially posted this recipe in June 2013. I was so new to taking pictures with my Canon camera, that the pictures turned out only so-so. I recently remade this recipe (January 2020) for my son and his wife when they came over to catch up after the holidays. I served them with Vegan Roasted Tomato Basil Soup. Everything was well loved and pretty well devoured after that lunch.

I’ve always felt Grilled Cheese Sandwiches work wonderfully with Tomato Soup. They’re even better when the soup is homemade. 🙂

We use two slabs of Swiss cheese but you can always use more if you like a lot of cheese.

Grilled Swiss Cheese and Tomato Sandwiches are great if you have to whip up a quick lunch or supper. I love a thick-sliced bread for this recipe so I used homemade bread. Texas Toast and Ezekiel bread will work, too.

Place two pieces of bread on your counter or plate.

Add Swiss cheese. Sprinkle with salt and pepper. We prefer Swiss cheese slices rather than regular cheddar cheese slices. It gives the sandwich an awesome flavor.

Add sliced tomatoes.

Carefully place sandwich together. Melt butter in skillet over low to medium heat.

Brown bread about five minutes before flipping bread carefully over to the other side. If the cheese doesn’t melt you need to either cover with a lid for this part, or microwave the sandwich on a microwavable plate for about 10-15 seconds. Remove sandwiches to serving plates.

These sandwiches are so simple, but they’re hearty, filling, and completely satisfying. I could only eat a half. They’re great served with an Asian Chopped Salad, too.

Grilled Swiss Cheese and Tomato Sandwiches

Grilled Swiss Cheese and Tomato Sandwiches are utterly irresistible. This has been our favorite way to make Grilled Cheese Sandwiches for decades. These use Swiss cheese instead of cheddar cheese for a wonderful, savory flavor. Great for tailgating parties or for a quick lunch or dinner menu. Add Tomato Soup and you have a comfort food meal that will knock your socks off.

  • 1 large skillet or griddle
  • 1 sharp knife to cut vegetables
  • 1 spatula
  • measuring spoons

Ingredients
  

  • 2 slices bread Texas Toast, Ezekiel Bread or your favorite sturdy bread
  • 2 slices Swiss cheese
  • 3-4 tomato slices sliced really thin
  • 1/4 tsp. Salt and pepper to taste
  • 2 tbsp. unsalted butter for frying

Instructions
 

  • Place bread on counter or plate.
  • Place a piece of Swiss cheese on each slice.
  • Layer one piece of bread with tomatoes.
  • Sprinkle generously with salt and pepper.
  • Place remaining piece of Swiss Cheese over top of the tomatoes and cover with bread.
  • Meanwhile, melt about a tablespoon of butter in a skillet over low to medium heat.
  • Place sandwich in skillet and cook for about 5 minutes until the underneath browns lightly.
  • Remove sandwich with a spatula.
  • Add another tablespoon of butter and melt in skillet.
  • Flip sandwich over so remaining side browns nicely, about another 5 minutes.
  • If the cheese hasn’t melted, cover with a lid for a few minutes.
  • Remove from skillet and place on a plate.
  • Cut sandwich in half.

Notes

NOTE: Don’t cook sandwiches on too high of a heat with a cast-iron skillet or the sandwiches will start smoking and scorch.
 
NOTE: It is better to cook the sandwiches over a lower heat for a little longer so the cheese melts nicely.
 
NOTE: If the bread is browned and the cheese hasn’t melted sufficiently, place sandwich on a microwavable plate and microwave for about 10-15 seconds.
