Baked Parmesan Chicken
Baked Parmesan Chicken is breathtakingly marvelous! It’s also very quick and easy to put together, so it’s perfect for weeknight dinners. I had this recipe oven ready in less than 10 minutes. Basically, all you do is make a breading of Italian style bread crumbs, parmesan cheese and several spices and herbs. Dredge the chicken in the coating, drizzle with a little olive oil and then bake. That’s it!

I initially posted this recipe in January 2014. My pictures were less than pleasing. So I remade the recipe in March 2020 before the country was shut down with Corona Virus. I had my son and daughter-in-law over for lunch one Sunday after church. I served it with Creamy Spinach Gratin. My daughter-in-law provided a salad. They loved the chicken and so did we!

Baked Parmesan Chicken is so quick and easy to assemble and get oven ready. I can do q-u-i-c-k and e-a-s-y!!
Baked Parmesan Chicken is delicious served with a side of Creamy Spinach Gratin and Boston Market Cornbread.
Here’s what I did.
I used these ingredients, plus olive oil.
Place Italian style bread crumbs and parmesan cheese on a plate. Add pepper, parsley, chives, dill weed, garlic salt, paprika and dehydrated onions.
Stir ingredients to combine.
Dredge chicken pieces in parmesan mixture and press coating firmly into chicken to adhere.
Dredge remaining side of chicken.
Spray a 10×15″ glass baking dish with olive oil cooking spray. Place chicken pieces in dish.
Drizzle chicken pieces with olive oil.
Bake at 350 for about an hour or until chicken tests done and juices run clear when pierced with a fork.
Baked Parmesan Chicken cooked up very moist and tender.
This chicken entree is also very economical to make. It’s delightful with Creamy Spinach Gratin and Boston Market Cornbread.

BAKED PARMESAN CHICKEN
(My own concoction)
Baked Parmesan Chicken
Equipment
- 1 10x15" glass baking dish
- 1 medium mixing bowl
- measuring cups
- measuring spoons
Ingredients
- 4 chicken breasts boneless, skinless
- 1/2 cup Italian bread crumbs
- 1/4 cup parmesan cheese (I used canned parmesan cheese)
- 1/2 tsp. ground black pepper
- 1/2 tsp. dill weed
- 1/2 tsp. paprika
- 1 tsp. garlic salt
- 1 tbsp. dehydrated minced onions
- 1 tbsp. dried chives
- 1 tbsp. dried parsley
- 1 tbsp. olive oil
Instructions
- Mix bread crumbs, cheese and seasonings in a medium mixing bowl.
- Dredge both sides of chicken breasts in bread crumb mixture being sure to coat chicken really well.
- Place chicken breasts in a 10x15” baking dish that’s been sprayed with olive oil cooking spray.
- Drizzle chicken with olive oil.
- Bake at 350° for approximately 1 hour until done.

Here’s another close up that shows the tasty coating on the chicken. You can see the parsley, onions and chives rather easily. It was delightful with a tossed salad and Creamy Spinach Gratin.

Instead of using breadcrumbs, we crush Pepperidge Farm Herb Stuffing and mix it with parmesan cheese. The dry stuffing creates a lighter and extra crunchy crust, while adding flavor such as sage and thyme. Be sure not to overprocess the stuffing in your food processor, or you will lose crunch and end up with just breadcrumbs.
