Hawaiian Pizza Cups

Teresa Ambra

These amazing Hawaiian Pizza Cups were the hit of our Super Bowl Party last Sunday. I mean really. Everyone kept going back for more! These easy miniature pizzas use biscuit dough in muffin cups. Then you spoon spaghetti sauce into the biscuits. Top the sauce with ham, pineapple, green pepper and then mozzarella cheese. And voila! After baking, these become one of the most mouthwatering and delectable hand-held pizzas you’ve ever tasted.

I’ve been ruminating about making something like this for some time. I enjoy Hawaiian and Polynesian food like Hawaiian Chicken and Waikiki Meatballs. So why not Hawaiian pizza? I love the Hawaiian-style pizzas at pizza restaurants so I thought to myself, why not come up with something similar?

And, of course, serving it for a Super Bowl party was the right venue, too. So, inspired from my Cheesy Pizza Treats, and Double Mini Pepperoni Pizza recipes, I figured I’d try my hand at a Hawaiian version. It turned out wonderful and so scrumptious to the taste buds. Even better then that, it’s so E-A-S-Y!!! Really! These only took a few minutes to prepare.

I’ll be honest with you. I regularly serve things I’ve never made before to company. Most of our guests don’t mind being my guinea pigs. I get that a lot of people would never feel comfortable enough serving something they’ve never tasted to company. I guess I really like the thrill of making new things and seeing how they turn out. I just had the feeling these would turn out well. I wasn’t wrong. Our guests thought Hawaiian Pizza Cups were terrific, too.

Another note about this recipe. My ingredients list and pictures are more of a guide. I chose to use 8-10 pieces of ham, 6 pieces of pineapple and 8-10 pieces of finely diced green pepper in each one. You can obviously use more if you prefer. I also found that one level tablespoon of spaghetti sauce is just about right. Too much more and the pizza cups will overflow. One more recommendation: don’t fill the biscuits with sauce until you’re ready to layer the ingredients and bake immediately, otherwise the biscuit dough may get soggy.

This is a great recipe for your next tailgating game or the Super Bowl. These Hawaiian Pizza Cups are quick, easy, and spectacular. Guys, especially love these hearty, filling and satisfying treats. We loved them and believe you will too when you make them.

I initially posted this recipe in February 2014. My pictures were okay but not very satisfying. I recently remade this recipe (December 2019) for our college group’s ugly sweater Christmas party. I also snapped a few new pictures. These treats were scarfed down in no time. The kids couldn’t keep their hands out of them. Truly, Hawaiian Pizza Cups are sensational. The next time you need an appetizer, you need to make these! 🙂

Remove biscuits from container. Roll out on the back of a plate to stretch the biscuit so it will fit into the muffin tins.

Spray muffin tins with cooking spray. Press dough from biscuits into bottom and up sides of muffin tins. The biscuit dough expands while cooking so don’t worry if the dough doesn’t get all the way to the top.

Sprinkle each pizza cup with mozzarella cheese. Try to tuck the cheese into the muffin tin so that none of it remains on top of the muffin pan. This will help for easier removal of the pizza cups later.

Here’s a close up of the pizza cups right out of the oven. We served these hot out of the oven, but when they cooled off we just popped them in the microwave for a few seconds and they were great warmed up that way too.
