Healthy Lemon Poppyseed Dressing

Healthy Lemon Poppyseed Dressing is fantastic. I tried this most amazing salad dressing the other day. In fact, it was SO good I ended up making two batches! It’s thick, creamy and spiked with fragrant and delicious, fresh, lemon zest. Throw in poppy seeds, of course, and this turned into one of my favorite salad dressings over night! I just loved it.

I have so many different salad recipes that I like to serve poppy seed dressing with. While I have a fantastic homemade recipe, I really liked the way this one turned out so much better.
I was making a meal for our pastor and his wife last week after they had some flooding. They were staying at a hotel about 30 minutes away. I was planning on using some store bought dressing I had in the cabinet. But when I looked at the bottle, it seemed to have a weird color and the date had expired. I opened it up and decided very quickly to throw the dressing out.
I didn’t have time to go to the store to buy more dressing. However, I remembered seeing this fantastic looking salad dressing on Pinterest a few days before. I decided to pull it up and see if I had the ingredients on hand. Thankfully, I did. I decided to make a healthier version with Greek yogurt instead of mayonnaise, and honey instead of sugar. I also used heavy whipping cream instead of milk or half-and-half because the blogger said it would make the dressing creamier.
I don’t know what I was expecting, but I certainly wasn’t expecting a dressing that tasted as fantastic as this one did. The lemon zest just made the dressing pop. It was thick and creamy–just the way I like salad dressings. It was also sweet, and I love sweet salad dressings, especially sweet poppy seed dressings!
It had everything–taste, texture, body. In fact, I took one lick on my finger tips and that was enough to convince me that I needed to make another batch for us! I sent the first batch of Healthy Lemon Poppyseed Dressing along with the salad I was making for our pastor and his family: Spring Mix with Berries, Glazed Pecans and Feta Cheese.
I made the second batch to serve with Salad Greens with Berries, Cashews and Goat Cheese. I made that for a houseful of company for last Sunday’s lunch. Everyone enjoyed it. One of my guests who normally doesn’t even put much dressing on his salad tried it and loved it. Another nice thing about this dressing is it’s gluten free for those of you who are gluten intolerant.
This is a spectacular poppy seed dressing to serve with your tossed salads. Healthy Lemon Poppyseed Dressing is certainly worth a try. It will certainly wow you as it did me! Healthy Lemon Poppyseed Dressing is one of the best homemade dressings I’ve tried recently.
This dressing is thick, creamy and has great texture and taste.
Healthy Lemon Poppyseed Dressing is terrific to pour over company salads like Spring Mix with Berries, Glazed Pecans and Feta Cheese.
Here’s what I did.
I used these ingredients.
Place all the ingredients in a blender and pulse about 15 seconds or until creamy. Serve over your favorite salad.
I made a batch of Healthy Lemon Poppyseed Dressing to go with one of my favorite salads: Salad Greens with Berries, Cashews and Goat Cheese.
I made a second batch of Healthy Lemon Poppyseed Dressing to go with another favorite salad: Spring Mix with Berries, Glazed Pecans and Feta Cheese.
This dressing was so amazing. The lemon zest just exploded in this recipe.

HEALTHY LEMON POPPYSEED DRESSING
(Recipe adapted from Chef-In-Training)
Healthy Lemon Poppyseed Dressing
Equipment
- 1 blender
- measuring cups
- measuring spoons
- 1 lemon zester or grater
Ingredients
- 2/3 cup Greek yogurt or Icelandic yogurt
- 1/2 cup heavy whipping cream
- 8 tsp. apple cider vinegar
- 6 tbsp. honey
- 1 tsp. freshly grated lemon zest (see note below)
- 4 tsp. poppy seeds
Instructions
- Place all ingredients in a blender and blend about 10-15 seconds until creamy.
- Makes just over 2 cups dressing.
