Carrot Raisin Salad is the perfect salad for summer holidays like Memorial Day, July 4th or Labor Day. It’s a sweet salad that’s almost like eating a dessert. The salad is chocked full of either shredded carrots or matchsticks carrots, pineapple, marshmallows, and raisins in a delightful whipped topping base. It has a great crunchy texture from the carrots along with a chewy texture from the raisins.

It’s one of those mouthwatering salads that’s great for backyard barbecues and potlucks. Carrot Raisin Salad is gluten free for those who have gluten sensitivities, but it is a fun salad and not overly low calorie or healthy.
This recipe was given to me by my mom years ago. When I was a child my mom used to attend Bridge Parties frequently. That was a big social hit during the fifties, sixties and even into the seventies when I was growing up.
Mom would make all kinds of delicious treats when it was her turn to host those parties. I’m pretty sure Mom picked up this recipe from one of those gals she used to play Bridge with all those years ago. I remember eating this tasty salad several times at my Mom’s house when we had young children. I made sure I collected the recipe.
When I was on my recent trip to Arizona for our church’s Navaho Mission Trip, Carrot Raisin Salad was on the menu. I was trying to use up about 50 pounds of carrots someone had donated, and along with a huge batch of Carrot Raisin Salad I whipped up Honey Glazed Carrots and Roasted Chicken with Rosemary which also featured carrots. Everyone loved all three recipes and kept going back for more! I remade the recipe again last week for a family recently suffering bereavement.

It’s really quick and easy if you purchase carrots that are already shredded. The marshmallows and pineapple add a lot of sweetness to the recipe, so I warn you in advance this salad really is more like a dessert. … I’ll have two servings [said the Sweet Tooth Queen]. 🙂

This is a great salad for any holiday menu.
This salad is so quick and easy to make if you have pre-shredded carrots. Although now in the days of food processors, it’s still not a difficult recipe to make.
Here’s what I did.
I used these ingredients.
Place carrots, pineapple, raisins and marshmallows in a serving bowl.
Add Miracle Whip, Cool Whip and sugar.
Stir ingredients to combine. Refrigerate until ready to serve.
Carrot Raisin Salad is nice, cool and refreshing on hot, summer days.
The pineapple, marshmallows and raisins add sweetness and texture to this recipe.
If you’re looking for a dynamite salad for Memorial Day, Father’s Day or any other summer holiday fun, this is the perfect salad to serve.

CARROT RAISIN SALAD
(Recipe from my mom, Helen Mattis, Titusville, FL)
Carrot Raisin Salad
Equipment
- 1 large serving bowl
- 1 grater for carrots, unless you purchase matchsticks carrots
- measuring cups
- measuring spoons
- 1 vegetable peeler
Ingredients
- 2 cups carrots grated
- 1/2 cup raisins
- 1/2 cup miniature marshmallows
- 2 tbsp. mayonnaise I prefer miracle whip
- 2 cups cool whip or other non-dairy whipped topping
- 1-2 tbsp. granulated sugar
- 5 oz. can crushed pineapple drained
Instructions
- Combine all ingredients.
- Chill well before serving.

Looks delicious, Teresa! I have never seen a carrot salad that was sweet like this. My parents used to play bridge also, and I remember my mom getting food and the house all ready. My biggest memory of it was bowls of M&M’s on each table. Of course the sweets are the things that stick out to me!:)
