Firehouse Sausage Chili is one marvelous chili recipe. This one uses Italian sausage, corn, two colors of kidney beans, diced tomatoes with green chilies, onions and garlic. I’ve never made a chili recipe with Italian sausage before but it really adds nice zip to chili. In fact, I think this recipe would be great with ground venison, beef, turkey and most certainly, Italian sausage.

I love Chili recipes. My old-time Chili Con Carne recipe is a favorite, but I also enjoy Pepperoni Pizza Chili  which is really a delightful change of pace. As I was combing through Pinterest trying to find ways to use several cups of frozen cooked sausage I came across this recipe. I thought I would give it a try and I’m glad I did because this chili was wonderful.

One of the nice things about Firehouse Sausage Chili is it’s made in the slow cooker. Except for frying the sausage, everything is dumped into the crockpot and slow cooked until ready. Talk about convenience. It’s so quick and easy. A packet of chili seasoning and red pepper flakes provide needed heat and it can be served with tortilla strips, rice or alone garnished with cheese, sour cream, parsley and chives.

This recipe is NOT gluten free since the chili seasoning packet has wheat. But if you can find a homemade chili seasoning mix online or use my Homemade Taco Seasoning instead, this recipe can be made gluten free as well.

If you’re looking for a new chili recipe, I highly recommend trying out a batch of Firehouse Sausage Chili. It’s so delicious you may have a hard time sharing a bowl with your family! 🙂

When I initially posted this recipe in October 2014, I made the recipe with regular bulk pork sausage. I remade the recipe (October 2017), for our weekly Friday night care group dinner. This time I used Italian pork sausage. It is really good either way, although I have a preference for Italian sausage, personally. I served it with Red Lobster’s Cheddar Bay Biscuits. Oh my, what a delight! I hope you enjoy these easy crockpot meal.

Here’s what I did.

I used these ingredients. The mason jar contains pink Himalayan sea salt.

Brown Italian sausage. Drain.

Spray crockpot with cooking spray. Add Italian sausage to crockpot.

Add corn, drained light red kidney beans and dark red kidney beans, tomatoes with diced green chilies, onions and garlic.

Add chili seasoning, salt and red pepper flakes. You can also substitute a homemade chili seasoning if you want the recipe to be gluten free.

Add beef broth.

Stir to combine.

Cook over low heat about 6 hours until done.

  • 1 hamburger chopper to chop sausage down into small pieces while frying
  • 1 sharp knife to cut vegetables
  • measuring cups

  • 2 lbs. Italian sausage cooked (but you can also use bulk pork sausage)
  • 1 medium onion chopped
  • 15.5 oz. can dark red kidney beans drained
  • 15.5 oz. can light red kidney beans drained
  • 15.5 oz. can whole kernel corn drained
  • 2 10-oz. cans diced tomatoes with green chilies UNDRAINED
  • 2-3 cloves garlic minced
  • 1/2 tsp. sea salt or kosher salt
  • 1/8 tsp. crushed red pepper flakes
  • 1.25 oz. pkg. chili seasoning mix or substitute homemade chili seasoning mix if you want to make this recipe gluten free
  • 2 cups beef broth or water

Instructions
 

  • Brown sausage in skillet over medium heat. Drain.

  • Spray crockpot with cooking spray.
  • Place everything in a crockpot and stir to combine.

  • 1 onion, chopped

  • 15.5-oz. can whole kernel corn, drained
  • 2 10-oz. cans diced tomatoes with green chilies, UNDRAINED
  • 1 tablespoon minced garlic from a jar
  • ½ tsp. kosher salt
  • 1/8 tsp. crushed red pepper flakes
  • 1.25-oz. pkg. McCormick Chili seasoning mix
  • 2 cups water
Instructions
  1. Place everything in a crockpot and stir to combine.
  2. Cook over low heat approximately 6 hours or until done.
  3. Serve over rice, or with tortilla chips.
Notes
While I used regular bulk pork sausage in this chili because I was trying to use up an abundance, the original recipe calls for Italian sausage. I believe that Italian Sausage would be an even greater choice for this chili recipe.
