I love biscuits, and Bacon Cheddar Biscuits are no exception. These biscuits are exceptionally good. They’re filled with cheddar cheese, bacon and chives. These three ingredients provide so much extra flavor than regular biscuits. I mixed it up a little bit and substituted coconut oil for the shortening in the recipe to make it a little healthier. I’m sure you can use butter, if you prefer.

But these biscuits have bacon and cheese! 🙂  So this is not one of those recipes that can be considered healthy or low calorie! All I can say is, “Wow!” I LOVED these biscuits. They were so mouthwatering, and yes, bacon does make everything better! 🙂

Last week we found out someone in our Sunday School class had flu (along with her kids). I brought them a tasty meal with Homemade Chicken Noodle Soup and these fabulous biscuits. I was looking for a biscuit recipe that wasn’t spicy, since they prefer food that isn’t too spicy. These biscuits were perfect. They loved them and so did I!

I saved out one large bowl of soup for both my husband and me. Just after taking pictures of these biscuits, I wolfed down two of the biscuits to sample before I sent the rest on to their family. Oh, my goodness. These biscuits exploded with flavor. They were absolutely some of the BEST biscuits I’ve ever eaten. No kidding.

Now, I consider myself something of a biscuit aficionado these days, because I love trying out new biscuit recipes. I’ve made some really dynamite biscuit recipes over the past year. Those include Pumpkin Pie Biscuits, Cheddar Cheese Biscuits, Sweet Potato Biscuits, Red Lobster’s Cheddar Bay Biscuits, Buttermilk Biscuits, and Herbed Biscuits. All of them are delectable in their own way. But when I sampled a bite of these Bacon Cheddar Biscuits, I wanted to sit down and eat the whole batch right then! Thankfully, I sent most of them off to my friends, or I would have had a melt down!

While I served these biscuits for dinner, they can just as easily be made for breakfast. Personally, I think these would make a great option for a holiday breakfast. They’re really not all that difficult to make either. I kneaded and worked flour into the dough for a couple of minutes but that was the only part of the recipe with any degree of difficulty.

I used real bacon, but you can also use the bacon that comes in a jar. I spread melted butter over the tops of the biscuits before and after baking them.  That’s the way my mom always baked bread and rolls when we were growing up. It tends to soften the crust a little so it’s not as hard. I doubled the recipe and ended up with 15 biscuits.

I like a really thick biscuit rather than thin, flat biscuits. Flatter biscuits tend to be tough. So I roll out the dough between one and two inches deep. (Actually, I didn’t “roll” the dough. I just “patted” it into a shape before cutting the biscuits.) The biscuits puff up even more while baking. They are much taller than regular biscuits. So you will have to cook them a little longer so they aren’t doughy inside. If your biscuits start getting brown, tent them with foil until they are cooked through.

If you’re looking for a spectacular biscuit recipe, then I can’t recommend Bacon Cheddar Biscuits high enough. These biscuits are so wonderful you will be hard pressed not to gorge yourself. If you don’t have coconut oil on hand, you can use shortening. For that matter, I’m sure butter would work just as well. I found Bacon Cheddar Biscuits on one of my favorite food blogs, Dessert Now, Dinner Later! Amber has some of the greatest looking recipes anywhere. Check it out sometime.

Now that fall is here I tend to eat more soups with breads or biscuits as a side. Bacon Cheddar Biscuits sure hit the spot with us. The biscuits went perfectly with Homemade Chicken Noodle Soup. I hope you’ll give Bacon Cheddar Biscuits a try soon. But be warned, if you’re a biscuit lover you won’t be able to keep your hands out of these biscuits!

Mix UNBLEACHED all-purpose flour (bleached flour toughens baked goods), baking powder and salt. Cut in coconut oil with a pastry blender until coarse crumbs form. If you don’t have coconut oil, you can substitute butter.

Generously flour your work surface. Place biscuit dough on top of flour and sprinkle with more flour. Work extra flour into the biscuit dough with your fingers.

Bake at 450 about 10-15 minutes or until golden brown. Because my biscuits start out very thick and still raise in the oven, they need to cook a little longer than flatter biscuits so they are not doughy in the centers.

  • 1 large mixing bowl
  • 1 pastry blender
  • measuring cups

  • 1 large skillet to fry bacon
  • 1 Rolling Pin
  • 1 biscuit cutter or glass
  • 1 large cookie sheet pan or large glass baking dish

Ingredients
  

  • 4 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 4 tbsp. granulated sugar
  • 2 tbsp. baking powder
  • 2 tsp. salt
  • 2/3 cup coconut oil or substitute butter or shortening
  • 1 1/2 cups sharp cheddar cheese shredded
  • 1/2 cup green onions diced
  • 9 slices Applewood-smoked bacon cooked
  • 1 1/2 cups 2% milk (I use 2%)
  • 4 tbsp. unsalted butter melted

Instructions
 

  • Cook bacon in a large skillet over low to medium heat.
  • Be careful not to cook on too high a heat so the bacon doesn't scorch.
  • Transfer cooked bacon to a paper towel-lined plate to drain.
  • When cook break the bacon up into small pieces; set aside.
  • Mix flour, sugar, baking powder and salt in a large mixing bowl.
  • Cut coconut oil (or butter) into mixture with a pastry blender until worked through the dough.
  • Add cheese, onions and bacon pieces and stir to combine.
  • Add milk and stir until mixture is wet.
  • Sprinkle flour generously on countertop and add biscuit mixture.
  • Sprinkle with more flour.
  • Work flour into dough with your fingers, then knead a minute or two, adding additional flour, until mixture is no longer doughy.
  • Roll or pat out into a circle about 1-2 inches deep.
  • Don't flatten the dough too much.
  • Cut with a biscuit cutter.
  • Place biscuits on a cookie sheet that’s been sprayed with cooking spray.
  • Melt butter.
  • Brush butter on tops of biscuits.
  • Bake at 450° for about 10-15 minutes or until golden brown.
  • Brush biscuits with melted butter again when they come out of the oven.

Notes

NOTE: If you make your biscuits one to two inches thick, they need to cook a little longer than flatter biscuits so they are not doughy in the centers.
 
NOTE: Don't be heavy handed with the rolling pin. You don't want the biscuits to turn out tough like hocky pucks. Make sure the dough is between one and a half and two inches in depth before cutting biscuits with a biscuit cutter or glass.

  • Transfer cooked bacon to a paper towel-lined plate to drain.
  • When cook break the bacon up into small pieces; set aside.
  • Mix flour, sugar, baking powder and salt in a large mixing bowl.
  • Cut coconut oil (or butter) into mixture with a pastry blender until worked through the dough.
  • Add cheese, onions and bacon pieces and stir to combine.
  • Add milk and stir until mixture is wet.
  • Sprinkle flour generously on countertop and add biscuit mixture.
  • Sprinkle with more flour.
  • Work flour into dough with your fingers, then knead a minute or two, adding additional flour, until mixture is no longer doughy.
  • Roll or pat out into a circle about 1-2 inches deep.
  • Don't flatten the dough too much.
  • Cut with a biscuit cutter.
  • Place biscuits on a cookie sheet that’s been sprayed with cooking spray.
  • Melt butter.
  • Brush butter on tops of biscuits.
  • Bake at 450° for about 10-15 minutes or until golden brown.
  • Brush biscuits with melted butter again when they come out of the oven.

Notes

NOTE: If you make your biscuits one to two inches thick, they need to cook a little longer than flatter biscuits so they are not doughy in the centers.
 
NOTE: Don’t be heavy handed with the rolling pin. You don’t want the biscuits to turn out tough like hocky pucks. Make sure the dough is between one and a half and two inches in depth before cutting biscuits with a biscuit cutter or glass.
