Oh, how I love a good chicken salad! Chicken Salad Wraps with Grapes and Pecans has it all. Good flavor, fantastic texture, beauty, nice crunch, and you get a few neat things like fruit and nuts thrown into it as well. I started with my traditional Chicken Salad Sandwiches recipe. I added a few of my favorite things from my Healthy Chicken Salad Sandwiches recipe. But instead of putting everything in a croissant, pita bread or sandwich bread, I wrapped everything up in fresh flour tortillas. They were wonderful.
Several weeks ago we had a houseful of company one Sunday after church. I decided to have appetizers that day and made my Slow Cooker Cocktail Meatballs, Easy Turkey and Cheese Tortilla Roll Ups and Veggie Tortilla Roll Ups. Then I decided to make up some Spicy Honey Hot Wings. I also had some leftover rotisserie chicken in the frig that I wanted to use up, so I decided to concoct this recipe as well, otherwise the chicken would have just gone to waste.
These Chicken Salad Wraps with Grapes and Pecans turned out very tasty. I cut some of them in half, then decided to cut them all down into smaller tortilla roll up bites. While I just diced up the chicken, you can easily put it in a food processor and shred the chicken for a smoother texture (which is what I usually do for chicken salad). But this way the wraps were very chunky with meat, pecans, grapes, diced orange bell pepper and a little green onion and celery.
I will tell you that my favorite (though not healthy) way to make chicken salad is with Miracle Whip. It has superior flavor and texture to Greek yogurt or mayonnaise, in my opinion. I’ve tried it all, but I still keep coming back to Miracle Whip as the binding ingredient for chicken salad.
If you try to use Greek yogurt in this recipe you will probably end up with a soppy mess because the wraps are best if they sit refrigerated for several hours before cutting. Greek yogurt will end up breaking down which is not the texture you want in a wrap. If you just hate Miracle Whip, use mayo, but you won’t get the benefit of the added seasonings like paprika and garlic that are in Miracle Whip. I highly recommend NOT using Greek yogurt.
If you’re looking for a tasty lunch or snack give Chicken Salad Wraps with Grapes and Pecans a try. It’s great for tailgating parties or any time you have company. And, it ‘s a great way to use up leftover chicken! You can also cut this recipe down if you don’t need 20 wraps! When those are each cut in fourths you end up with 80 tiny tortilla bites of chicken salad. On the other hand, if you want these to serve for lunches at the office all week, go ahead and make up all 20 and you will be one very happy camper all week. 🙂

Chicken Salad Wraps with Grapes and Pecans is crunchy and delicious.
Here’s what I did.
I used these ingredients. H-E-B grocers make their own homemade tortillas from scratch every day so I like to use those since they are softer and fresher than regular tortillas.
Dice up chicken and place in a mixing bowl. Or you can shred the chicken in your food processor.
Add diced green onion, celery, orange or red bell pepper, grapes, pecans, sweet pickle relish, Miracle Whip, sugar, salt and pepper.
Stir ingredients well to combine.
Spread about a half cup of chicken salad mixture on top of each tortilla.
Roll up tortillas very tightly, but be careful you don’t break them. It is easier working with fresh tortillas versus the ones you buy that have been sitting on the shelves for days. If necessary, use a little sour cream or extra Miracle Whip along the edge of the tortilla so you get a good seal. Wrap tortillas in plastic wrap then place in zip lock bags. Refrigerate several hours or overnight before cutting.
Here I cut the wraps in fourths and trimmed the ends.
Or you can cut the tortillas in half and serve as wraps.

CHICKEN SALAD WRAPS WITH GRAPES AND PECANS
(My own concoction
- 4 cups cooked, diced chicken or diced rotisserie chicken
- 1 orange or red bell pepper, diced
- 4 green onions, sliced
- 1 ½ cups [url href=”http://miraclewhip.com/” target=”_blank” title=”miracle whip”]Miracle Whip[/url], more or less, to your taste
- 1/3 to ½ cup sweet pickle relish
- 2 ribs celery, diced
- 1 tsp. salt
- ½ tsp. black pepper
- 1 tbsp. sugar
- ¾ cup red grapes, halved
- ½ cup pecan pieces
- 20 flour tortillas
- sour cream or [url href=”http://miraclewhip.com/” target=”_blank” title=”miracle whip”]Miracle Whip[/url] to seal the edges well
- Mix together all ingredients except tortillas and sour cream.
- Spread about ½ cup of chicken mixture on each tortilla.
- Roll up very tightly.
- Spread a very thin layer of sour cream around the top edge of the tortilla so the edges will seal.
- Wrap each tortilla in plastic wrap.
- Refrigerate several hours or overnight.
- Cut in pieces or serve whole.
This is a great way to use up leftover rotisserie chicken!
