Cinco de Mayo is just around the corner so I thought I’d pull together a bunch of Tex-Mex recipes so you can celebrate! This list of Over 60 Cinco de Mayo Recipes includes everything from appetizers to main dishes to salads to soups and a few other things thrown in between. These are great recipes I’ve made a lot over the years, and ones everyone is sure to enjoy.

I’ve included a few that include roasted pumpkin which you won’t be able to find this time of year, but you will be able to substitute roasted butternut squash with excellent results. You may notice that I’ve also included my Homemade Taco Seasoning recipe. I use it as a seasoning in so many of these recipes that I decided to include it as well.
