35 Chicken Casseroles are fun and creative ways to prepare chicken. We eat a lot of chicken at our house. I probably cook more chicken recipes than all other meats combined. While my Tasty Chicken Recipes collection was mostly chicken in whole pieces, this collection has more recipes using cut-up rotisserie chicken or leftover chicken cut down into bite-sized pieces. Although there are several that are one-dish meals in casserole form using whole chicken pieces as well.
I usually purchase boneless, skinless chicken breasts on sale for $1.99 per pound and stock up on 30-40 pounds at a time and freeze it down in packages of two. My husband prefers boneless chicken breasts over any other piece of chicken, so if I cook up a whole chicken, all the other meat usually ends up going into a casserole or soup a few days later.

Hi Teresa: I enjoy receiving your blog, and these chicken recipes have to be the ‘very’ best of the best chicken recipes which are out there….so where do I start? First of all, I’ll need to stock-up on a whole lotta chicken, for sure. We love chicken, since it’s delicious, healthy, and there are so many ways in which to prepare it. I’m saving this entire post, and will make at least one of these lovely chicken dishes every week.

Thanks so much for letting me know, Angla. Two of our favorite recipes in this collection are the Chicken and Biscuit Casserole and the Oven Barbecued Biscuits and Chicken. I’ve made those recipes so many times over the years. Our kids just loved these casseroles. The first one has quite a few steps but so worth it. It does make a LOT, so either make for company or cut the recipe in half. The second recipe is SO easy. It takes about 5-10 minutes prep time and the rest of the time it’s baking in the oven. I like to throw potato or corn casserole recipes in the oven at the same time and everything is usually ready about the same time. I’ve always been a casserole queen so I have a lot of casseroles and main dishes with chicken. Thanks for stopping by. Enjoy.

Teresa, there is not one of these recipes that I would not enjoy tremendously! They all look so wonderful and I love chicken dishes, especially casseroles. Casseroles are my thing! 🙂 Thanks for sharing! I’m thinking of making that chicken mushroom casserole for sure!

Thanks, so much, Kim. That Chicken and Mushroom Casserole turned out to be a really great recipe. You may want to check the seasoning, though, and add more as you desire. Some of these recipes have certainly become our favorites over the years. They are great to make for company because most of them make a lot. 🙂
