Snickers Cheesecake Brownies
Do you want a drool-worthy dessert for your next social gathering? Snickers Cheesecake Brownies are the B-E-S-T!! No kidding. These brownies rock. They start with a regular chocolate chip cookie dough, but instead of chocolate chips, I used Snickers Baking Bites. I found them at Wal-Mart about a month ago and snatched them up from the shelf as soon as I saw them! I added a luscious cheesecake layer and voila! The ultimate, perfect brownie. Yep.

I will make one recommendation though. I didn’t want to chop up the Snickers Baking Bites, so I had to make a course correction so to speak when I was making these. Even though I initially mixed the baking bites in with the cookie dough, I don’t recommend it.
They are so big that they don’t spread into the pan very well. Instead, I ended up digging them out of the cookie dough and sprinkling them on top of the cheesecake layer. I found that worked much better and it didn’t affect the taste at all. For people like my husband, who is a Snickers connoisseur, this is the perfect dessert. Top it with a little Snickers ice cream and you are all set to jet!
We hired three very large trucks and 9 total movers last week when we moved into our new home. Since I had made up so many of these cheesecake brownie recipes, I handed out a container to each of the guys. They were wonderful. I’ve never had movers take such awesome care of my furniture before. They wrapped everything in blankets and then in a plastic wrap to protect the furniture. They also were very careful hauling stuff into the house so the walls, doors and furniture didn’t get dented. I have to admit I was extremely impressed.
If any of my blog followers live in the Dallas-Fort Worth area, I can’t recommend AB Movers enough. Phenomenal job. Anyway, the guys were tickled pink that they got to go home with homemade cookies. Many of them tried them on the spot and told me how much they appreciated and enjoyed them.
Anyway, I am completely unpacked and now am running around town every day trying to get the stuff we need finish everything off here. I’m so relieved to be out of boxes and able to sit down on my own comfortable furniture again. Actually, I haven’t even tried the ovens yet. 🙂
I still have about 20-30 recipes to post from when we lived in our rental house! Quite frankly, it feels good to be able to sit down and blog again without worrying that I should be doing something else. I started walking the neighborhood in the early stages of house building nine months ago. I try to get in a walk about 3-5 times a week (if not more) so, as a result, I’ve already met a whole slew of our neighbors. We love our neighborhood and are so grateful to be settled here and able to enjoy all the surroundings.
We’ve had a lot of people ask us why we moved from our dream home south of the Metroplex to the tiny town we are now. The answer is simple. We wanted to be a lot closer to our church and all our friends up this way. I felt isolated there since everyone we were good friends with was 20-30 minutes away.
While we gave up having a lot of restaurants and shopping within a five minute drive, we can get to just about anything in 15 minutes which isn’t bad. But we’re only four minutes from church, and we have several church families that live in our current neighborhood.
We also don’t have to deal with a pool anymore (way too much work and expense), and because we had so many trees on our former property, it seemed like we were always raking leaves. (About 300 bags per year in November and February). It was big and a lot more upkeep than we wanted to deal with as we get older. All in all, we are thrilled to be here. Now that I am unpacked, I plan on getting back in the kitchen again and whipping up delicious meals for us and friends.
If you want a spectacular dessert and love Snickers Bars, you’ve got to get yourself to the store and look for their new Snickers Baking Bites. Then, make up a batch of my delicious Snickers Cheesecake Brownies. Prepare to drool!
Snickers Cheesecake Brownies are the ultimate brownie.
If you enjoy Snickers Bars, you’ll love this dessert.
I loved having large clumps of chocolaty Snickers Baking Bites with every mouthful.
Here’s what I did.
I used these ingredients for the cookie dough layer.
Soften butter. Add eggs, brown sugar, white sugar, baking soda, salt and vanilla.
Cream ingredients with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. DO NOT ADD the Snickers Baking Bites here.
Stir ingredients with a wooden spoon to combine. Because I added the Snickers Baking Bites I ended up removing each one from the cookie dough to make the recipe work.
Spray an 11″x17″ jelly roll pan with cooking spray. Place half to two-thirds of the cookie dough mixture (without Snickers Baking Bites) into the pan and press down.
I used these ingredients for the cheesecake layer.
Cream cheesecake ingredients until no lumps remain.
Smooth cheesecake layer over top of cookie dough without the Snickers Baking Bites.
Sprinkle remaining cookie dough over top of cheesecake layer. Sprinkle Snickers Baking Bites over top of cookie dough.
Bake at 350 approximately 35-40 minutes or until a toothpick inserted in center comes out clean.
Snickers Cheesecake Brownies are great for tailgating parties or anytime you have company over.
Any time you want a delicious dessert, consider putting Snickers Cheesecake Brownies on the menu. No one will be disappointed.

SNICKERS CHEESECAKE BROWNIES

Snickers Cheesecake Brownies
Equipment
- 1 11x17" jelly roll pan
- 2 large mixing bowls
- 2 wooden spoons
- 1 electric mixer
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
COOKIE DOUGH LAYER:
- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 1 cup brown sugar packed
- 2 large eggs
- 2 tsp. vanilla extract
- 1 tsp. baking soda
- 1/2 tsp. sea salt
- 3 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 20 oz. pkg. Snickers Baking Bites (two 10-ounce packages)
CHEESECAKE FILLING:
- 16 oz. pkg. cream cheese softened (two 8-ounce blocks)
- 2 tsp. vanilla extract
- 2 large eggs
- 1 cup granulated sugar
Instructions
COOKIE DOUGH LAYER:
- Mix butter, sugars, eggs, vanilla, baking soda and salt with an electric mixer until well-mixed.
- Stir in flour until well combined.
- Spray 11”x17” jelly-roll pan with cooking spray.
- Press about ½ to 2/3 of the cookie dough into the pan; reserve remaining dough for topping.
- Spread cream cheese filling over top of cookie dough layer.
- Crumble remaining cookie dough over top of the cream cheese layer.
- Sprinkle all of the Snickers Baking Bites over top.
- Bake at 350° for about 35-40 minutes, or until toothpick inserted in center comes out clean.
CHEESECAKE FILLING:
- Mix cream cheese, eggs, vanilla, and sugar with an electric mixer until smooth.
- Pour over cookie dough crust layer and cover with remaining dough.
- Sprinkle Snickers Baking Bites on top.
- Bake as directed above.

Hi Teresa, I am sorry I got behind on your blog posts. I always love to read them. We have had company for almost 2 months straight. It was really fun, but I am so behind in the blogging department. I am really excited to hear you are moved into your new home. Congratulations! That is wonderful. I’m so glad you enjoy your new neighborhood. These brownies look awesome!
