Reese’s Peanut Butter Cup Blondies
Reese’s Peanut Butter Cup Blondies are spectacular. Who doesn’t love those amazing Reese’s peanut butter cups? Well try adding them to a delicious shortbread dough and you have A-M-A-Z-I-N-G! My husband found little mini Reese’s peanut butter cups that come in a package unwrapped.

They are so easy to use in recipes. No fussing with removing the wrappers or muffin papers, so I chopped them up super fast. But if you have leftover Halloween or Christmas candy, those will work perfectly fine too. I cut each of those little, tiny Reese’s cups in quarters, but the regular size peanut butter cups will need to be cut in eighths or more!
I was busy the month of December baking, baking and more baking for our Christmas Cookie Extravaganza this year. I did it in two stages. The first couple of weeks were spent baking goodies for John’s work place and our neighbors. The next week or so I baked goodies for our church office, staff, elders and Sunday school class friends. These jewels were part of that second batch of baking.
I used one of my favorite shortbread doughs tried every kind of combination including: Peppermint, Heath Toffee Bars, Chocolate & Vanilla Chips, White Chocolate and Cranberries, Hershey’s Nugget, Snickers, and Reese’s Peanut Butter Cups. All were so delicious. I even had one guy tell me how he enjoyed the different flavors from the same basic dough. I baked a few different cookies to add to all the shortbread style blondies and everyone loved our cookie baskets this year.

They’re relatively easy to make if you purchase the unwrapped Reese’s cups. The smells of chocolate and peanut butter will delight your heart! Prepare to be WOWed. 🙂
Reese’s Peanut Butter Cup Blondies are awesome!
Each blondie is filled with the chocolaty and peanut butter flavors from Reese’s Peanut Butter Cups.
Every bite will have you drooling!
Here’s what I did.
I used these ingredients. The Reese’s minis came unwrapped so they were a lot easier to use for this recipe.
I cut each of these miniature peanut butter cups in fourths. Set aside.
Soften butter. Place in a large mixing bowl with oil, eggs, vanilla, sugar, powdered sugar, sea salt, baking soda and cream of tartar.
Cream with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add 2 cups chopped Reese’s peanut butter cups.
Stir with a wooden spoon to combine.
Press dough into a greased 12×17″ cookie sheet. Sprinkle with an additional cup of chopped Reese’s peanut butter cups.
Bake at 350 for 30-35 minutes or until a toothpick inserted in center comes out clean.
Reese’s Peanut Butter Cup Blondies are a great way to use up leftover Halloween or Christmas candy.

Reese's Peanut Butter Cup Blondies
Equipment
- 1 11x17" jelly roll pan
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 sharp knife to cut Reese's Cups
- 1 spatula
Ingredients
- 1 cup unsalted butter softened (2 sticks)
- 3/4 cup canola oil or use coconut oil or avocado oil
- 1 cup granulated sugar
- 1 cup powdered sugar
- 2 large eggs
- 1/2 tsp. baking soda
- 1/2 tsp. cream of tartar
- 1 tsp. sea salt
- 1 tsp. vanilla extract
- 5 1/2 cups UNBLEACHED all-purpose flour (Bleached flour toughens baked goods)
- 3 cups Reese's peanut butter cups coarsely chopped, divided use
Instructions
- Cream together butter, canola oil, sugars, eggs, vanilla, baking soda, cream of tartar and salt in a large bowl with electric mixer.
- Add flour and 2 cups Reese’s peanut butter cups.
- Stir with a wooden spoon until very thoroughly mixed.
- Press dough into an 11x17” jelly-roll style cookie sheet.
- Sprinkle with remaining peanut butter cups.
- Bake at 350° for 30-35 minutes or until lightly golden brown on top.
- Cool completely.
