Gingered Beef is one of those delectable recipes that I really enjoy eating. It’s a lovely Asian main dish featuring beef, carrots, miniature bell peppers in a delicious sauce with ginger, soy sauce, sesame seed oil, apple cider vinegar, brown sugar, sesame seeds and red pepper flakes. It’s got great zip without being overpowering.

I found a recipe on Pinterest a month or so ago that I thought would be worth giving a try. I really liked the idea that the recipe could be made in 30 minutes. I added a few ingredients and used a healthier avocado oil rather than vegetable oil to fry the beef in. I wish that I had had fresh ginger on hand at the time, but I had to substitute ground ginger. Still, it turned out really well.

Let me recommend one main thing if you decide to try this recipe. I found some pre-cut bottom round steak for stir-fry that works fabulously for this kind of stir-fry recipe. It cooks very quickly and is only about 1/8″ or 1/16″ thick. Otherwise, make sure you cut your beef across the grain into as thin of strips as possible. Cutting across the grain will actually help the beef become more tender.  Otherwise, the beef will be too tough. Flank steak may also work well.

I presoaked my rice so that’s why it looks more like porridge or oatmeal. Soaking grains before cooking releases the bad phythalates and enzymes that cause digestive issues or irritable bowel syndrome. Because the rice in America is badly compromised with arsenic, it’s really a good idea to pre-soak rice before cooking. ;(

Gingered Beef is a delicious 30-minute meal you can make on busy weeknights. I used two skillets to make this dish. One dish cooked the beef in batches, and the other one was for the veggies and sauce. The beef is dredged in cornstarch so when it cooks up it ends up with a nice crunchy coating on it. Gingered Beef is a tasty way to eat beef. I served it with rice and thought it was heavenly.

Here’s what I did.

I used these ingredients.

Slice beef down into very thin strips. (Even thinner than this is preferred). Dredge both sides in cornstarch.

Heat avocado oil in a skillet over medium heat. Begin frying steak in batches. After one batch is cooked, set it out on a paper towel lined plate and fry remaining beef in skillet. (Don’t crowd the beef while frying).

In another skillet saute onions in avocado oil for 2 minutes. Add miniature bell pepper rings and carrots and saute a couple more minutes.

Add garlic, ginger, red pepper flakes and saute about 2 more minutes.

Add soy sauce.

Add brown sugar, sesame seeds, apple cider vinegar and sesame oil. Stir to combine.

Reduce heat to low and saute until sauce thickens about 10 minutes.

Add beef. (This is only one batch out of three). Stir to combine.

Garnish beef with additional sesame seeds if desired.

Serve over hot, cooked rice.

Ingredients
  

  • 2 1/4 lbs. sirloin steak or sizzlers cut in thin strips
  • 1 onion chopped
  • 4 miniature bell peppers seeded and sliced in rings
  • 3 cloves garlic minced
  • 2 cups matchsticks carrots or sliced carrots
  • 1/2 cup low sodium, gluten free soy sauce (I use Tamari-lite by San-J)
  • 1/4 cup apple cider vinegar
  • 2 tbsp. sesame oil
  • 1/4 cup avocado oil plus more for frying beef
  • 1/2 tsp. ground black pepper
  • 1/2 cup brown sugar loosely packed
  • 1 tsp. ginger
  • 1 cup cornstarch or as needed
  • 1/4 tsp. crushed red pepper flakes
  • 2 tbsp. sesame seeds plus more for sprinkling over the top
  • 3 cups hot, cooked rice or wild rice blend to serve with

Instructions
 

  • Slice sirloin steak or sizzlers into thin strips.
  • Coat with cornstarch.
  • Pour about ¼ to ½ cup of avocado oil into a hot skillet.
  • Fry beef in batches until crispy, about 5 minutes on each side.
  • Set aside.
  • Meanwhile, pour about ¼ cup of avocado oil in another skillet.
  • Add onions.
  • Sauté 2 minutes until transluscent.
  • Add carrots and bell peppers.
  • Sauté a few minutes.
  • Add garlic, ginger and red pepper flakes and sauté a few more minutes.
  • Finally, add soy sauce, cider vinegar, sesame oil, pepper, brown sugar and sesame seeds.
  • Reduce heat to low and cook until sauce thickens, about 10 minutes.
  • Combine cooked beef with sauce and stir until well combined.
  • Sprinkle with additional sesame seeds, if desired.
  • Serve over hot, cooked rice.

Notes

NOTE: I soaked the rice in water about 45 minutes before cooking.
 
NOTE: A very thin cut bottom round steak cut pre-cut about 1/8" or 1/16" thick for stir fry works really well for this recipe. The beef cooks very quickly and does not get tough.
 
NOTE: If you slice the beef too thickly, it will be too tough. The steak must be very thinly sliced in order to work. Be sure to cut slices across the grain so the beef will be more tender.
 
NOTE: You can also use a more tender cut of meat like sirloin sizzlers or tenderloin.
