Peach White Chocolate Chip Blondies are to die for. 🙂 Seriously, these goodies are just what the doctor ordered–especially if you’re in the mood for a chocolate fix. These cookies are filled with both fresh peaches and white chocolate chips. Every bite is soooo mouthwatering. I could have eaten a ton of them. 🙂

Back in the middle of August, I received a 20-pound container of fresh peaches from the Washington State Fruit Commission. This choice fruit was amazing. The peels were so fine they were almost like nectarines. Their juicy peaches were perfect for dessert recipes so I made a bunch of them. In fact, I made a caramel version, a chocolate version and a white chocolate chip version with this recipe and each one was spectacular.
I bake a LOT of cookies and brownies. Probably half of the posts on my blog feature cookies and brownies. I also have hundreds of salads, casseroles, entrees, homemade breads and other delightful recipes. But I have a ton of cookies and brownies. Why is that? You may be wondering. Shortly after I started this blog in June 2012, my husband asked me if I would mind baking up cookies or brownies and preparing them for the freezer. That way he could give them out as gifts whenever and wherever the urge took him. Since that time, I’ve baked thousands of cookies and hundreds of different recipes–just for cookies and brownies!
Fortunately for me, there are still people who enjoy sweet treats. John took a batch of these jewels to a friend in the hospital when he had knee replacement surgery a few weeks ago. They love all the goodies I bake for them and never mind being guinea pigs for new recipes. They ended up in the hospital longer than expected. So have a container of these delicious cookies was great for them.
While fresh peaches are still available, you need to give this recipe for Peach White Chocolate Chip Blondies a try! Plan to drool over every bite. 🙂

These cookies are terrific any time you have to bring a dessert somewhere.
Here’s the recipe.
I used these ingredients.
The box from Washington State Fruit Commission included two layers of these luscious peaches.
Place softened butter in a mixing bowl. Add sugar, brown sugar, eggs, vanilla, baking soda and salt.
Cream ingredients with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add fresh peaches and white chocolate chips.
Stir ingredients with a wooden spoon to combine.
Grease an 18×26″ cookie sheet. Spread mixture into prepared cookie sheet. (I had to keep my hands moist to do this).
Bake at 350 for about 45-50 minutes or until a toothpick inserted in center comes out clean.

PEACH WHITE CHOCOLATE CHIP BLONDIES
(My own concoction)
Peach White Chocolate Chip Blondies
Equipment
- 1 11x17" jelly roll pan
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 1 spatula
- 1 measuring cups
- measuring spoons
- 1 sharp knife to peel, cut and dice peaches
Ingredients
- 1 1/2 cups unsalted butter softened (3 sticks)
- 1 1/2 cups brown sugar firmly packed
- 3/4 cup granulated sugar
- 3 large eggs
- 2 tsp. vanilla extract
- 4 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1 1/2 tsp. baking soda
- 1 tsp. sea salt
- 2 cups fresh peaches peeled and finely diced
- 12 oz. pkg. white chocolate chips (NOT vanilla chips or premiere white baking chips)
Instructions
- Preheat oven to 350°.
- Grease or spray a large 11x17” jelly roll pan with cooking spray.
- In large bowl, combine butter, sugars, vanilla, eggs, salt and baking soda.
- Beat at medium speed with an electric mixer until fluffy.
- Stir in flour, peaches and white chocolate chips with wooden spoon until combined.
- Spread and press down cookie dough into prepared cookie sheet.
- Bake at 350 degrees for 40-50 minutes, or until lightly browned and a toothpick inserted in center comes out clean
