Sweet Potato Casserole
Sweet Potato Casserole is one of the most delicious, mouth-watering sweet potato casseroles you will ever eat! Every bite is scrumptious. The sweet potatoes are whipped up into a souffle with vanilla, eggs, sugar, and then a praline topping is added. Oh, my! Words don’t do justice to the amazing taste of this fantastic side dish. Our family loves this casserole every time I make it during the holidays. It is also a very requested recipe.

I received this recipe back in the early 1980s from a cook in our church who worked in the Pinellas County School System as a cook. She assisted our church’s head cook. If you like a Praline topping on your sweet potatoes, this recipe is for you. It’s fairly simple and just about everyone loves it even if they are not big sweet potato lovers.

When I initially posted this recipe in June 2012 it was in the early days of my blog and my pictures were blurry, grainy, dark and less than appetizing because I only had a cheap iPhone 3 at the time. I’ve been going back through all those first year recipes where I used a poor quality camera and remaking the food so I can get better, eye-appealing pictures.
I recently remade this amazing dish (December 2015) for our Sunday school class’s Christmas party. It went over like gang busters. Even people that don’t normally eat sugar loved this recipe. The praline topping over top of a souffle-type base is amazing. I saw people going back for seconds and thirds. I believe you’ll think so too.
Sweet Potato Casserole is like a sweet potato souffle with a praline streusel topping.
Sweet Potato Casserole is to die for! It is amazing.
This is almost like eating dessert!
Here’s what I did.
I used these ingredients. The ingredients on the left are for the streusel topping. The ingredients on the right are for the sweet potato souffle.
Bake sweet potatoes. Sweet potatoes usually take about 90 minutes to bake at 350. At 400 you can sometimes have them cooked in an hour.
With a potato masher, mash the sweet potatoes.
Add butter, eggs, sugar, vanilla and salt. Beat the mixture with an electric mixer until smooth–30-60 seconds or so.
Spray a deep dish glass pan with cooking spray. Spoon sweet potato mixture into dish.
Make Streusel Crumb Topping: Place flour, brown sugar and pecans in a mixing bowl.
Cut in butter with a pastry blender.
Sprinkle the praline topping over top of the sweet potatoes.
Bake at 325 for 45 – 60 minutes or until done.
Serve Sweet Potato Casserole with your favorite main dish.

SWEET POTATO CASSEROLE
(Recipe from Jackie Sanders, cook, First Baptist Church Indian Rocks, Largo, FL)
Sweet Potato Casserole
Equipment
- 1 2-quart baking dish or an 8x12" glass baking dish
- 1 large mixing bowl
- 1 wooden spoon
- 1 electric mixer
- measuring cups
- measuring spoons
- 1 small mixing bowl
- 1 roaster to bake sweet potatoes
- 1 potato masher
- 1 pastry blender
Ingredients
SWEET POTATO FILLING:
- 3 cups sweet potatoes cooked
- 1 cup granulated sugar
- 1/2 cup unsalted butter softened or melted (1 stick)
- 3 large eggs
- 1 tsp. vanilla extract
- 1 dash salt
PRALINE STREUSEL TOPPING:
- 1 cup light brown sugar packed
- 1/2 cup all-purpose flour I use unbleached
- 1/2 cup unsalted butter cold (1 stick)
- 1/2 cup pecans chopped (measure after chopping)
Instructions
SWEET POTATO FILLING:
- Wash sweet potatoes; prick with a fork and put in a large roaster pan.
- Roast sweet potatoes in oven about one to 1 /12 hours at 400 degrees.
- Peel sweet potatoes and place in a large mixing bowl.
- Mash potatoes with a potato masher.
- Add granulated sugar, butter, eggs, vanilla and salt.
- Whip all together with an electric mixer and put in greased casserole dish.
- Top with Streusel Topping.
- Bake at 325° for 45 minutes.
PRALINE STREUSEL TOPPING:
- Mix brown sugar, nuts and flour in a small mixing bowl.
- Cut in butter with pastry blender until coarse crumbs form.
- Sprinkle over top of casserole and bake at 325° for 45 minutes.
