Corn ‘n’ Broccoli Bake
Corn ‘n’ Broccoli Bake is a wonderful casserole for company or holiday baking. Broccoli, creamed corn, saltine crackers and a little onion provide delightful flavor and texture in this dish. We’ve served this recipe many times over the years and it always pleases every guest we serve it to.

My younger son used to refer to me as the casserole queen. Yep, that’s me! I love making casseroles even if I don’t eat them as much as I used to. They are great for holidays and potlucks and helpful to have in your collection if you want to use certain ingredients.
Taste of Home has some of the best casseroles in the business, and this recipe is no exception. A lot of their recipes are posted online now–at their own website here, and at other places like allrecipes.com. But I’m old-fashioned and still like to look through the cookbooks with all the pictures and their great presentation.
Corn ‘n’ Broccoli Bake is incredibly easy, uses only a few ingredients, is quite economical, and is a great side dish for potlucks, holidays and even something your own family will enjoy for regular dinners. The vegetables work really well together. I think you will enjoy making this tasty dish. Our family and company have sure enjoyed it!
When I first made this recipe in June 2012, I had just begun my food blog and my picture taking ability was very insufficient and outright deplorable. Such was the case with my pictures of this delicious recipe.
I recently remade this recipe for a holiday Christmas party (December 2014) and it was very well received. I took some new pictures that more adequately depict what this tasty dish is all about. It’s still a great holiday side dish and one of our favorites.
Corn ‘n’ Broccoli Bake is a fabulous casserole especially for the holidays.
Corn ‘n’ Broccoli Bake is a wonderful side dish for any main meal.
It’s a simple and satisfying way to use corn and broccoli. Substitute gluten-free crumbs if you’re gluten intolerant and oil for the butter if you’re lactose intolerant.
Here’s what I did.
I used these ingredients.
Place saltine crackers in a zip lock bag. Crush with a rolling pin until cracker crumbs are very fine.
Place frozen broccoli in a mixing bowl. Add a can of creamed corn, dehydrated onions, egg, pepper and 1/4 cup crushed saltines.
Stir mixture together.
Pour into casserole dish that has been sprayed with cooking spray.
Mix remaining saltine crackers with butter and stir together for topping. Spread saltine crackers over top of casserole. Bake at 350 approximately 45 minutes to an hour or until done.
Remove from oven and serve.
Serve garnished with fresh parsley, if desired.
We’ve always loved serving Corn ‘n’ Broccoli Bake for company and everyone we’ve served it to has always loved it.
This delicious casserole is a great way to use up garden broccoli and corn, too!
Corn ‘n Broccoli Bake is so quick and easy to make up. This casserole can be oven ready in about 10 minutes.

CORN ‘N’ BROCCOLI BAKE
(Recipe adapted from Taste of Home Cookbook 1999 “Corn ‘n’ Broccoli Bake)
Corn 'n' Broccoli Bake
Equipment
- 1 mixing bowl
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 Rolling Pin to crush crackers
- 1 zip lock bag WITHOUT the "stand and fill" bottom
- 1 small bowl
- 1 1 1/2-quart baking dish
Ingredients
- 16 oz. can cream-style corn
- 12 oz. pkg. broccoli frozen, chopped, thawed
- 1 sleeve Saltine crackers crushed
- 1 large egg beaten
- 1 tbsp. onion dried, minced
- 1 dash ground black pepper
- 2 tbsp. unsalted butter melted
Instructions
- In a bowl, combine the corn, broccoli, 1/2 cup of Saltines, egg, onion and pepper.
- Place in a greased 1 ½-qt. baking dish.
- Combine the butter with remaining Saltines; sprinkle over top.
- Cover and bake at 350° for 45 minutes.

My grandmother had been using this recipe since the 60s! It’s long been a staple for thanksgiving and Christmas. Although I steam 3 heads fresh broccoli, add extra corn(usually a bag of microwave steam corn) and sometimes add cheese 🙂
