Salad Greens with Berries, Cashews and Goat Cheese
Salad Greens with Berries, Cashews and Goat Cheese is phenomenal! This green salad is full of fruit. Five kinds! Strawberries, blackberries, blueberries, raspberries, and pineapple. It is a delicious combination of flavors – not too sweet, and not too salty or bitter.

It has a little crunch to offset the softness of the berries and some great textures. It also has protein because I added spinach. If I were to make it again, I might even consider adding hard-boiled eggs to it. But as it was, it turned out really delicious.
I wanted to make a green salad that had a lot of fruit and find a good Raspberry Vinaigrette dressing or balsamic vinegar dressing to go with it. Since the salad had so much fruit, I knew I needed a dressing that was not overly sweet. Imagine my dismay when I started looking at the labels of all my favorite Ken’s Steak House dressings and found they are all made with high fructose corn syrup! Ugh.
I love his Lite Poppyseed dressing and several other salad dressings, but I would rather use sugar than high fructose corn syrup if I have to choose my poison! (And both of them are poison in my opinion, but that is best left to another post!)
I wish I could find healthy dressings made with honey rather than artificial sweeters, cane syrup, corn syrup and other garbage like MSG and ingredients you can’t pronounce. Most of the ones I’ve tried don’t taste all that great. I guess I’m going to have to get more industrious and start making my own.
Anyway, I concocted this recipe last night and I think you will really like it. I wanted to have a good mix of salty/savory flavors to counterbalance the sweet taste from all the fruit. I think the final product is a really good balance. I used Hendrickson’s Sweet Vinegar and Olive Oil salad dressing which has a little bite too it. I get it at Wal-Mart or Brookshires here in the metroplex. But your favorite vinaigrette will work just as well.
The nice thing about Salad Greens with Berries, Cashews and Goat Cheese is the salad is light and refreshing–perfect for hot summer days when you’re grilling outside or having backyard barbecues. It’s also easier to make during the summers because all the fruit is so much more accessible and less expensive to purchase than other times of the year.

I recently remade this delicious salad for company and made a homemade poppyseed dressing to go along with it. The results were spectacular! I’ve freshened up the pictures so you can get a better idea of what this salad is supposed to look like. Add Texas Toast croutons as a garnish, if you prefer.

Salad Greens with Berries, Cashews and Goat Cheese is a salad with the best of both worlds–savory flavors from the goat cheese and cashews, and sweet flavors from five different fruits.
I made a scrumptious homemade poppyseed dressing, but you can add the salad dressing of your choice.
Here’s what I did.
Pour 2 or 3 6-oz. bags Dole butter bliss lettuce into a large salad bowl or Tupperware bowl. Add about 5-oz. de-stemmed spinach. (I remove the stems, but you don’t have to). Wash and pat dry a cup of blueberries. Layer the blueberries on top of the salad. In the same way, add raspberries, blackberries and sliced strawberries.
Add pineapple and cashews. Crumble the goat cheese on top of the salad. Refrigerate until ready to serve. Vinaigrettes work really well with this salad as do poppyseed dressings.
Salad Greens with Berries, Cashews and Goat Cheese is a great salad to serve for company. It’s festive, beautiful, and has sensational taste.
I made up a homemade poppyseed dressing that was spectacular with this salad. You can also add Texas Toast croûtons on top of the salad for a little extra crunch and savory flavors if you desire.
This lovely salad is healthy, low calorie and gluten free!

SALAD GREENS WITH BERRIES, CASHEWS & GOAT CHEESE
(My own concoction)
Salad Greens with Berries, Cashews and Goat Cheese
Equipment
- 1 large salad bowl with tongs
- 1 sharp knife to cut fruit
- 1 cutting board
- measuring cups
Ingredients
- 12 oz. bag Dole Butter Bliss lettuce (two six-ounce bags)
- 5 oz. bag baby spinach stems removed
- 1 cup cashews
- 1 cup blueberries washed and patted dry
- 1 cup blackberries washed and patted dry
- 1 cup raspberries washed and patted dry
- 1 cup strawberries washed, sliced
- 1/2 fresh pineapple cut in small bite-sized pieces
- 6 oz. goat cheese crumbled
- 1 cup Texas Toast croutons if desired
- 1 1/4 cups homemade poppyseed dressing if desired
Instructions
- Layer ingredients in order listed in large salad bowl or Tupperware bowl except for Texas Toast croutons.
- Refrigerate, until ready to serve.
- Toss salad ingredients and serve with the dressing of your choice.
- Add croutons and serve.

No, I don’t think it’s possible to outdo that luscious looking Blackberry Cream Cheese Strata! My that looks amazing. I love creating new salads especially since I eat so much of it I don’t want to eat the same old thing all the time!
