Creme de Menthe Chunk Cookies
Creme de Menthe Chunk Cookies are delightful. I just love mint and peppermint especially in baked goods. It adds a delicious coolness to the recipe that I really enjoy. These wonderful Creme de Menthe Chunk Cookies have just the right taste–and they are so easy to make.

You can have a batch of these in your oven in about 8-10 minutes and eating these delicious treats within 20-30 minutes! It’s a great cookie to whip up for holiday parties, but you can usually get the creme de menthe baking chips all year round now so these can be made any time.
This is another fabulous cookie I found off the back of an Andes Creme de Menthe Baking Chips package. Their website is amazing. When I initially posted this recipe in November 2012, I made Creme de Menthe Chunk Cookies for a school fundraiser along with my Toffee Almond Sandies and Laura Bush’s Cowboy Cookies. They were a big hit as they got auctioned off for a silent auction.
I recently remade this recipe (June 2015) in order to refresh the pictures, since the first were taken with an old iPhone 3 and weren’t quite as clear as I would have liked. Every time we make these cookies people enjoy them. I hope you do to.
Creme de Menthe Chunk Cookies are filled with the luscious flavors of chocolate and mint. Yum.

Creme de Menthe Cookies are totally delish! Especially if you love Andes Mints.
Here’s what I did.
I used these ingredients.
Soften butter and place in mixing bowl. Add brown sugar, white sugar, vanilla extract, baking soda, baking powder and eggs.
Mix all ingredients together with electric mixer.
Add flour and Creme de Menthe baking chips.
Stir all ingredients together with a wooden spoon. Chill dough at least one hour.
Roll dough into balls and place on cookie sheets that have been sprayed with cookie spray.
Bake in 350 oven about 10-12 minutes or until done.
Creme de Menthe Chunk Cookies are delectable, mint-tasting cookies. You can see how much chocolaty goodness is in each bite.
I’ve always loved these cookies. They’re easy to whip up for any baking occasion.

CRÈME DE MENTHE CHUNK COOKIES
(Recipe adapted from Andes Crème De Menthe Baking Chips package)
Creme de Menthe Chunk Cookies
Equipment
- 2 large sheet pans
- 1 electric mixer
- 1 large mixing bowl
- 1 wooden spoon
- measuring spoons
- measuring cups
- 1 spatula
Ingredients
- 1/2 cup unsalted butter softened
- 3/4 cup dark brown sugar packed
- 1/2 cup white granulated sugar
- 1 tsp. baking soda
- 1 tsp. baking powder
- 2 tsp. vanilla extract
- 2 large eggs
- 2 2/3 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 10 oz. pkg. Andes Crème de Menthe Baking Chips
Instructions
- Blend butter, sugars, baking soda, baking powder, vanilla and eggs with an electric mixer until smooth.
- Stir in Crème de Menthe baking chips and flour.
- Chill approximately one hour in refrigerator.
- Roll into balls and place on greased baking sheets.
- Bake at 350˚ for approximately 12-15 minutes or until done.
- Rotate cookie sheets on oven racks every six minutes of baking time.
- Cool in pans for two minutes before removing to wire racks.

These festive Creme de Menthe Chunk Cookies are great for Christmas parties and Christmas cookie exchanges.
Creme de Menthe Chunk Cookies are very easy to make. This is an excellent cookie to bake for teaching kids to become familiar with baking in the kitchen!
Creme de Menthe Chunk Cookies are also an excellent option for St. Patrick’s Day, but you can make these lovely cookies any time of the year!

I did not care for these cookies. The dough was not very moist it was on the dry side. I won’t make these again.

Sorry, you didn’t care for them, Pam. The recipe is on the back of the Andes creme de menthe pieces package. If you want a moister cookie, you can always reduce the flour. But in doing so you have to prepare yourself for flatter cookies that run on the cookie sheet.
