Loaded Bacon Ranch Potato Bake is awesome! A little over three years ago after the birth of our first grandchild, we were visiting my son and daughter-in-law and I was really craving a potato casserole dish with bacon, ranch dip, and a few other things.

I looked and looked and looked over recipes on the Internet and really couldn’t find anything that had all the ingredients I wanted to use to make up my potato dish so I decided to take a stab at creating my own. It turned out wonderfully. Loaded Bacon Ranch Potato Bake is very creamy in its texture and not dried out like some potato casseroles get after baking.
As the name implies it’s like loaded baked potatoes but in casserole form. And, it is really LOADED! This creation is extremely flavorful, but in no way can it be considered light in calories or even exceptionally healthy even if it is gluten free because it has a package of dry ranch dressing mix in the ingredients.
However, if you’re looking for a marvelous casserole to make for company or holidays, Loaded Bacon Ranch Potato Bake is sure to be a treat for all involved. I served this dish with Apricot Glazed Ham last week when we had a houseful of company. But this would be great with chicken, steak, or pork. This recipe serves a lot, too. It fills a large casserole dish so you can get at least 12 servings out of it. Maybe more if you serve a lot of other food like I did.
Loaded Bacon Ranch Potato Bake is a winner! I think you will find it so if you decide to try this excellent potato casserole recipe. But be prepared to be cleaned out and not have very many leftovers. This was the hit food item when I made it a couple of weeks ago. Everyone went back for seconds!
When I first posted this recipe in April 2013, I had recently purchased my Canon camera but was not confident enough to use it. So I was still taking pictures with my little iPhone. The pictures were not as clear as I would have liked and really didn’t show this casserole off like they should. That notwithstanding, this recipe has been pinned almost 5k times! (April 2015).
I recently remade this recipe for a funeral meal and decided to retake the pictures. These turned out significantly better than the first go-around. While this potato casserole is NOT low in calories, it is still one of the best ones you will ever eat! 🙂

Loaded Bacon Ranch Potato Bake is a great casserole to make for holiday menus or company dinners.
Loaded Bacon Ranch Potato Bake is one of the most spectacular potato casseroles you’ll ever eat!
Here’s what I did.
Dice green onion and place in large bowl. Set aside other green onions for garnish. Add washed, cubed red potatoes, cubed cream cheese, sour cream, Colby Jack and Monterey Jack cheese, parmesan cheese garlic powder, pepper, dry Ranch dressing mix and olive oil. You can also hold off on the olive oil and drizzle it over the top of the casserole if you prefer.
Microwave bacon until crisp. Set aside to cool. If you want some more bacon on top of the casserole, cook two more pieces and set aside with green onions for toppings. Add rosemary, garlic cloves, and parsley.
Stir ingredients to combine.
Pour potatoes into a 9×13″ baking dish that has been sprayed with cooking spray.
Bake about an hour at 350. Remove from oven.
Sprinkle remaining cheese over top. Garnish casserole with reserved green onions and bacon pieces as desired.
Bake another 10 minutes or so until the cheese melts.
Loaded Bacon Ranch Potato Bake is LOADED! Lots of bacon, several kinds of cheese, green onions, sour cream, cream cheese, garlic and dry ranch dip go into this amazing dish.
I feel like Pavlov’s dogs salivating over this tasty side dish.

Loaded Bacon Ranch Potato Bake
Equipment
- 1 large 9x13" glass baking dish
- 1 large mixing bowl
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 large skillet
- 1 sharp knife to cut vegetables
Ingredients
- 8-10 medium red potatoes washed and cubed
- 5 green onions sliced
- 6 strips thick sliced bacon cooked and broken into ½” pieces
- 2 cloves garlic minced
- 8 oz. sour cream
- 8 oz. pkg. cream cheese cut into cubes
- 1 1/2 to 1 3/4 cups sharp Cheddar cheese shredded
- 1 cup Colby Jack or Monterey Jack cheese shredded
- 2/3 cup parmesan cheese grated
- 1/4 tsp. garlic powder
- 1/4 tsp. ground black pepper
- 1 pkt. dry Hidden Valley Ranch Dressing mix
- 1/4 tsp. dried rosemary
- 2 tbsp. dried parsley
- 3-4 tbsp. olive oil
Instructions
- Fry bacon in skillet until done; remove to paper towel-lined plate to drain.
- Mix all ingredients except 1 cup cheddar cheese, reserved green onions and reserved bacon pieces in a large bowl.
- Spread into large 9x13” baking dish sprayed with cooking spray.
- Bake 1 hour at 350˚ or until potatoes test done.
- Top with remaining cup of Cheddar cheese, green onions, and bacon pieces.
- Heat until cheese is melted about 5-10 minutes.
