Sweet Potato Fries with Garlic Herb Sauce

Sweet Potato Fries with Garlic Herb Sauce is a spectacular way to prepare potatoes. It’s just so succulent and amazing. When I made this recipe a few weeks ago for regular oven fries I knew it was a winner. But I really wanted to give it a whirl with sweet potatoes and see how it turned out. Wow!

If I thought it was great with regular potatoes it was fantastic with sweet potatoes! This is such a simple recipe and I made it vegan by using only olive oil in the recipe instead of butter. It’s an excellent side dish for any kind of meat, but especially for chicken and ham (or pork).
I love sweet potatoes so I am constantly looking for ways to use them in side dishes or main dish entrees. I am so glad I tried this recipe with these adaptations because it turned out exceptionally well. In fact, I enjoyed the sweet potatoes so much I ended up eating 3 or 4 servings the night I served this alone! Fresh herbs also really add a lot to the sauce, but if you don’t have any fresh herbs, dried herbs will do in a pinch.

When I initially posted this recipe in June 2013 I still occasionally used my iPhone for a camera which was the case here. The pictures were not as nice as I would have liked. I recently remade this recipe (April 2016) so I could retake the pictures. I served it with one of my favorite chicken recipes with a Homemade Kansas City Style Barbecue Sauce. What a marvelous dinner. This is a healthy, low calorie, gluten free, vegan and clean eating side dish that’s as delectable as can be. Great for holiday dinners too. I hope you give it a try soon.
Sweet Potato Fries with Garlic Herb Sauce is really a quick and easy side dish to make.
I love to make oven fry dishes when I’m baking chicken so everything can go in the oven at once. But it’s also great with grilled chicken!
Here’s one of my, ahem, four servings of Sweet Potato Fries with Garlic Herb Sauce! Healthy, gluten free, low calorie, and vegan. What more could you ask for in a recipe!
Here’s what I did.
I used these ingredients.
Peel potatoes and cut down into thin wedges. Place sweet potatoes in a large glass baking dish sprayed with olive oil cooking spray. Brush sweet potatoes with two to three tablespoons olive oil. Season heavily with cracked salt and pepper. Bake at 350, covered with foil, for about 20 minutes. Turn potatoes over with spatula and return to oven an additional 20-25 minutes or until potatoes are fork tender.
Meanwhile, make garlic herb sauce. Add olive oil to a measuring cup. Add minced garlic from a jar or about 4 cloves fresh chopped garlic. Add snipped fresh chives, fresh thyme and parsley. Stir to combine. Brush Garlic Herb Sauce over top of baked potatoes. Return to oven about 5 minutes longer.
Remove from oven and serve with your favorite entree.
Serve potatoes as a side dish to chicken, steaks, ham, or pork roast, if desired.

SWEET POTATO FRIES WITH GARLIC HERB SAUCE
(Recipe inspired from my Garlic and Herb Fries)
Sweet Potato Fries with Garlic Herb Sauce
Equipment
- 1 vegetable peeler
- 1 sharp knife to cut vegetables
- 1 large 10x15" glass baking dish
- 1 spatula
- 1 pastry brush
- measuring cups
- measuring spoons
- aluminum foil
Ingredients
- 2 large sweet potatoes sliced in thin wedges
- 2-3 tbsp. olive oil
- 1/2 tsp. cracked salt and pepper to taste
- 1/3 cup olive oil
- 1 heaping tablespoon dried parsley
- 2 tbsp. fresh thyme
- 1/4 cup fresh chives diced, or about 1 tbsp. dried chives
- 1 heaping teaspoon minced garlic from a jar or 2 cloves garlic, minced
Instructions

Hi Teresa, I just wanted to tell you I made these fries tonight, and absolutely loved them. My family did, too. Especially my oldest son. He said a couple times how much he liked them. I was surprised at how many fries only 2 sweet potatoes made. Thank you for such a delicious recipe. I definitely will be making these again soon!

I love sweet potatoes, too! I know what you mean about not being able to resist them. I made some the other day with a lot of brown sugar on them. I could not stop eating those. They were so good. These look wonderful with the garlic and herbs.

I could seriously eat sweet potatoes every day! This is a great recipe you’ll have to give it a try. Add more seasonings if your family prefers more.
