We first tasted this delicious Yellow Squash Casserole a few weeks ago when one of the couples we invited over for dinner brought it. It was so, so mouthwatering I asked for and promptly received the recipe! Now I have plenty of squash recipes, but this one had a different twist in many ways and it was just so incredibly tasty that I knew I needed to add it to my repertoire of squash casseroles.

Yellow Squash Casserole calls for mashing the yellow squash after cooking it and then adding butter, eggs, green onions, Italian-style bread crumbs, Parmesan cheese, salt, pepper and Italian seasoning. Then after placing all of that mixture in your casserole dish you drizzle more butter over top, add more bread crumbs, and then sprinkle the top surface with additional Parmesan cheese. Oh, my. The eggs make this sort of a “souffle-type texture.” The flavors are marvelous as you will attest to if you try this recipe for yourself!

We had a huge gathering of church folks at our Minister of Worship’s home out in the country yesterday and I brought this casserole along with several others. They have a huge spread with a lot of land so it’s really conducive to having a lot of people over. Plus, his wife, Angie, does a lot of catering so she is used to all that goes into putting on one of these shindigs.

Even though there were several hundred people that showed up for the festivities, we didn’t run out of food! There was barbecued brisket, chicken, and sausage along with every kind of side dish imaginable plus a whole mess of cookies! Yum. I am so glad Corey shared this great recipe with me, and I was really glad to make up a big batch of this for our barbecue yesterday so others could enjoy it too. I did manage to save out a small bowl to snap a few pictures so you could see how scrumptious this lovely casserole looks.

If you’re looking for a dynamite squash casserole to make for the holidays then I highly recommend this one. It is fantastic with great taste and texture. It’s a great way to sneak veggies into your kid’s portions too! I like the fact that this casserole is savory rather than sweet. This casserole is so rich and gooey! Everyone absolutely loved it. When Corey brought this to our house a few weeks ago, I seem to recall the casserole being cleaned out. She didn’t have a lot of leftovers even though there was so much food spread out on our island to eat.

Boil chunks of yellow squash until tender, then drain. Mash with a potato masher.

Add Italian style bread crumbs.

Add 2 eggs, beaten.

Add diced green onions.

Add salt, pepper, sugar and Italian seasoning.

Add butter and half the Parmesan cheese.

Stir to combine. Grease a 9×13″ glass baking dish and pour mixture into the prepared dish.

Drizzle remaining butter over top.

Yellow Squash Casserole is outstanding. This amazing side dish recipe uses yellow squash, green onions, Italian-style bread crumbs and Italian seasoning to jazz it up. We sprinkle the top with Parmesan cheese amping up the flavors even more. This is terrific for a company or holiday side dish like Thanksgiving, Christmas or Easter.

  • 1 large sauce pan
  • 1 potato masher
  • 1 colander
  • 1 sharp knife to cut vegetables
  • 1 9x13" glass baking dish
  • measuring cups
  • measuring spoons

Ingredients
  

  • 7 medium yellow squash
  • 1/2 cup Italian style bread crumbs (you can also substitute gluten free bread crumbs)
  • 1/2 cup green onions sliced or sweet onions, chopped
  • 2 large eggs
  • 1/2 cup unsalted butter melted (1 stick)
  • 1 tbsp. granulated sugar
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1 1/2 cups Parmesan cheese grated
  • 1 tbsp. Italian seasoning
  • 1/4 cup bread crumbs for garnish
  • 1/3 cup Parmesan cheese for garnish

Instructions
 

  • Place a large sauce pan over high heat.
  • Fill pan about two-thirds full of water.
  • Cut up squash and add to sauce pan
  • Boil under tender.
  • Drain in colander and mash squash with a potato masher.
  • Transfer squash back to the large sauce pan.
  • Add half cup bread crumbs and all the remaining ingredients except half the butter and Parmesan cheese to sprinkle on top.
  • Pour into greased 9x13” baking dish.
  • Pour remaining butter on top.
  • Sprinkle with remaining 1/4 cup bread crumbs, then the Parmesan cheese.
  • Bake at 375° for one hour.

Notes

NOTE: Corey doesn’t like onions so she always substituted 1 tbsp. dehydrated onions for the onions in the recipe. Although I prefer to use fresh onions of any kind.
 
NOTE: 4C brand makes gluten free bread crumbs and Italian style gluten free bread crumbs. I purchase them at Walmart.

  3. Add all the remaining ingredients except half the butter and enough cheese to sprinkle on top.
