Peachy Oatmeal Scotchies
Peachy Oatmeal Scotchies are such awesome comfort food. Well, folks, I am finally winding down the peach recipes. I have one more recipe after today, yay! Peachy Oatmeal Scotchies are another delicious cookie based on my regular Oatmeal Scotchies recipe.

These Oatmeal Cookies are filled with butterscotch chips, cinnamon and peaches for absolutely marvelous flavor and texture. These crunchy cookies are chewy on the inside, and just as delightful as can be.
Many of you know I’ve had bushels of peaches from our home grown peach trees out back. I’ve been baking away trying to use up most of them before they went bad or were eaten by birds and squirrels. I made 40 recipes in all. Tomorrow I’ll conclude with my favorites and why.
But for now, I decided to see if my favorite Oatmeal Scotchies recipe could handle the addition of peaches. It could and did! Adding peaches to an oatmeal cookie with butterscotch chips was spectacular. Oatmeal cookies have never tasted so wonderful!
Peachy Oatmeal Scotchies are a great cookie for summer and fall potlucks, holiday parties, backyard barbecues and tailgating parties. Other than peeling and paring the peaches, this recipe is a zip. In no time at all you will find yourself with some of the most scrumptious cookies cooling on your counter that you’ve ever tasted.
I recommend Peachy Oatmeal Scotchies for any type of occasion, but you better get to the store while you can and get peaches while they are still in season. Surprise your family with a batch of these jewels. But don’t say I didn’t warn you–they will be begging you for more!
Peachy Oatmeal Scotchies are soooooooo good!
Each cookie is filled with oatmeal, cinnamon, peaches and butterscotch chips for an explosion of flavor.
Peachy Oatmeal Scotchies are great for any tailgating party.
Here’s what I did.
I used these ingredients.
Place softened butter in a mixing bowl. Add sugar, brown sugar, eggs, cinnamon, baking soda, salt and vanilla.
Mix with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add oatmeal, butterscotch chips and finely, diced peaches.
Stir with a wooden spoon to combine.
Spray cookie sheets with cooking spray. Using a 1/4 cup ice cream scoop, scoop dough onto prepared cookie sheets.
Bake cookies at 375 for 15-20 minutes or until done. These cookies were whoppers so they took a little longer to bake.
Peachy Oatmeal Scotchies are a heavenly treat your whole family will enjoy.
Better get yourself to the store soon because peaches will be out of season very soon.

PEACHY OATMEAL SCOTCHIES
(Recipe inspired from Nestle’s)
Peachy Oatmeal Scotchies
Equipment
- 2 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 large cookie scoop
- measuring cups
- measuring spoons
- 1 sharp knife to cut and pare peaches
- 1 wooden spoon
- 1 spatula
Ingredients
- 2 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 1/2 tsp. salt
- 3/4 cup granulated sugar
- 2 large eggs
- 3 cups oatmeal (I use old-fashioned rather than quick oats)
- 1 tsp. baking soda
- 1/2 tsp. cinnamon
- 1 cup unsalted butter softened
- 3/4 cup light brown sugar packed
- 1 tsp. vanilla extract
- 12 oz. pkg. butterscotch morsels
- 2 cups peaches peeled and finely diced
Instructions
- Preheat oven to 375°.
- In a mixing bowl, combine butter, sugar, brown sugar, eggs, vanilla, salt, baking soda and cinnamon; beat with an electric mixer until light and fluffy.
- Gradually stir in flour, oatmeal, peaches and butterscotch chips with a wooden spoon until well mixed.
- Spray cookie sheets with cooking spray.
- Using a ¼ cup cookie scoop, scoop dough and place cookie dough on prepared cookie sheets.
- Bake 15-20 minutes or until done.
- Rotate cookie sheets on racks every 6-7 minutes.
- Cool completely.

- 1 cup butter, softened
- ¾ cup brown sugar
- 1 tsp. vanilla
- 12-oz. pkg. Nestle’s butterscotch morsels
- 2 cups peeled, finely diced peaches
- Preheat oven to 375°.
- In a mixing bowl, combine butter, sugar, brown sugar, eggs, vanilla, salt, baking soda and cinnamon; beat until light and fluffy.
