Ice Cream Chocolate Chip Cookies
Ice Cream Chocolate Chip Cookies are breathtaking. Prepare yourself for a slice of heaven! No kidding. Whoever heard of adding ice cream to cookies? Isn’t it a delectable idea? All I can say is it works. It really works. It works so well you will not be able to stop eating them. A-D-D-I-C-T-I-V-E!!! Ice Cream Chocolate Chip Cookies start with a really good Chocolate Chip Cookie recipe and then you subtract a few ingredients in order to add the ice cream. Yum with a capital “Y!!!”

I know by now you’ve probably thought that I had fallen off the face of the map. Well, just about. For over three weeks we’ve had spotty, irregular or non-existent Internet service. 🙁 On top of that, we’ve moved! So for the past three weeks I have packed and packed and packed for 8-10 hours a day every day.
Then add in a week of making multiple trips to our storage shed, taking some yard and tool stuff to a friend’s airplane hangar, and moving some of our stuff into a rental house, and we’ve been B-U-S-Y! We’re building a home which will take about six more months to complete.
Meanwhile, we’re in a cute, little, rental house that a friend is allowing us to rent without being locked into a set amount of months. It’s quite similar to the apartments available for rent in canary wharf. We’ve been here since Saturday and we’ve been trying to get Internet hooked up and FINALLY after several starts and stops, it’s actually going. Yay! Now maybe I can get caught up on all my blog posts.
I was really intrigued by this recipe the first time I saw it in my BlogLovin’ feeder. By eliminating an egg and a little butter and substituting ice cream instead, cookies turn out with wonderful texture and taste. I had to try it! Since making these cookies I’ve tried several other baked goods with the idea of using ice cream and everything turns out delectably.
Last month our church’s Children’s Minister asked me to bake lots of cookies for the Vacation Bible School we were hosting in a local park. I was only too glad to oblige. I decided these luscious cookies would be on the menu along with my BEST Chocolate Chip Cookies and Chocolate Chip Meltaways. Everyone who tried Ice Cream Chocolate Chip Cookies (including me) thought they were amazing. If you concentrate you can tell that there’s ice cream in the cookies. But if you didn’t know beforehand you might not be able to figure out the secret ingredient.
Ice Cream Chocolate Chip Cookies are special. If you’re looking for a fabulous cookie to make anytime you need a chocolate (or ice cream) fix, this is the cookie for you! But be prepared to have to make another batch right away. After all, everyone will want 3 or 4 or 5 or…. more of these lovely cookies.

These cookies are loaded with chocolate.
The secret ingredient is ice cream! But you’d never know it if you weren’t expecting that taste in a cookie.
Here’s what I did.
I used these ingredients. I made a double batch of this recipe so ingredients are twice as much as normal.
Melt butter. Add sugars. Mix with an electric mixer until smooth.
Add eggs, vanilla ice cream (don’t melt it, just scoop it into a measuring cup and add frozen), vanilla, baking soda and salt.
Cream ingredients with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add chocolate chips. Stir to combine.
Scoop cookie dough with a a small cookie scoop and place on a cookie sheet with waxed paper. Wrap with plastic wrap and refrigerate at least one hour.
Spray cookie sheets with cooking spray and place chilled dough on cookie sheets.
Bake at 350 for 12-15 minutes or until done. Rotate cookie sheets on racks every 5-6 minutes during baking time.

Unless you know the secret ingredient in these cookies is ice cream, you may not recognize the flavors at first.
All that ooey, gooey, chocolaty goodness. Wow!

ICE CREAM CHOCOLATE CHIP COOKIES

Ice Cream Chocolate Chip Cookies
Equipment
- 3 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 large cookie scoop
- 1 spatula
Ingredients
- 1/2 cup unsalted butter melted
- 1/3 cup granulated sugar
- 1/2 cup light brown sugar packed
- 1/2 cup vanilla ice cream
- 1 large egg
- 1 tsp. pure vanilla extract
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 cups UNBLEACHED all-purpose flour Bleached flour toughens baked goods
- 2 cups chocolate chips
Instructions
- Melt butter.
- Add brown sugar and granulated sugar and mix with an electric mixer until combined.
- Add ice cream, egg, vanilla, baking soda and salt and mix again until smooth.
- Stir in flour and chocolate chips.
- Scoop balls of dough with a large cookie scoop and place onto a cookie sheet or baking dish covered with wax paper.
- Cover with plastic wrap and chill for at least 1 hour.
- Preheat oven to 350°F.
- Place cookies approximately 2” apart on greased cookie sheets.
- Bake for about 12-15 minutes, or until cookies start to turn golden brown around the edges.
- Rotate cookie sheets on racks every six minutes while baking.
- Cool completely.

- Add brown sugar and granulated sugar and mix with an electric mixer until combined.
- Add ice cream, egg, vanilla, baking soda and salt and mix again until smooth.
- Stir in flour and chocolate chips.
- Scoop balls of dough onto a cookie sheet or baking dish covered with wax paper.
- Cover with plastic wrap and chill for at least 1 hour.
- Preheat oven to 350°F.
- Place cookies approximately 2” apart on greased cookie sheets.
- Bake for about 12-15 minutes, or until cookies start to turn golden brown around the edges.
- Cool completely.
