Bruschetta Pasta Salad is one of the most delicious pasta salad recipes I’ve eaten.I have to admit to loving pasta salads. Tomatoes, fresh basil from our garden, onions, garlic, olive oil, balsamic vinegar and sea shell pasta provide such a tasty combination of flavors. I’m sure you’ll enjoy this salad down to the last bite. 🙂

I’ve made plenty of pasta salads over the years. Greek, Farmer’s MarketRanch BLT, Garden, and Trio Antipasto for starters. I suppose my love for pasta salads starts way back in my childhood days when I enjoyed simple macaroni salads at family reunions and other gatherings. It was love at first bite. I’ve made lots of different kinds of pasta salads with a variety of additions over many decades and rarely pass up a macaroni salad or pasta salad at potlucks or parties. Yes, I love ’em!

A little over a month ago we had a group of friends over for lunch one Sunday after church because we weren’t sure how much longer we were going to be in our house. (We had our house up for sale and we were waiting to be through the option period before we started packing). I made several different kinds of sliders and a couple of different salads and desserts that day and everything was a hit.

As it turned out, within about a month of that party, we were all packed up and moved out! My husband and I worked like dogs for three solid weeks, packing, moving, unloading stuff in storage and our rental house, and then repeating the process about five more times! Thankfully, the folks in our church are simply marvelous and stepped up big time to help us out.  We ended up with 21 different people helping us move, (load or unload), pack, unpack in our rental house, clean the old house and mow the yard, and even help with our mega garage sale in 105 degree Dallas heat!

We are now settled for about six more months and then our new home should be completed. We expect cooler weather the next time we move, plus, unpacking is always easier than packing, in my opinion. Yes, I’m ready for a breather and actually had a couple of crash days earlier this week where I got in a few naps. No, I’m certainly not 30 anymore! And yes, we have way too much stuff. 🙁

So between moving and zero Internet service over the past three weeks, that’s why you haven’t heard too much from me. Hopefully that will soon change because I have a long list of recipes to publish. If you want a great salad to make for Labor Day picnics or other fun gatherings, I highly recommend Bruschetta Pasta Salad. It’s great for company and a fantastic way to use up lots of tomatoes or other garden veggies. Enjoy.

I used these ingredients.

Place chopped tomatoes in a bowl. Add green onions, red onions, garlic, chopped fresh basil, parmesan cheese and olive oil.

Add balsamic vinegar salt and pepper and stir to combine.

Cook pasta only until al dente. Drain and rinse with cold water to stop the cooking process. Add cooked, drained and rinsed sea-shell pasta to bowl with bruschetta.

Stir gently to combine so the pasta doesn’t tear. Refrigerate until ready to serve.

Sprinkle salad with fresh parmesan cheese and basil before serving.

  • 1 large stock pot
  • 1 colander
  • measuring cups
  • measuring spoons
  • 1 mixing bowl
  • 1 wooden spoon
  • 1 sharp knife to cut vegetables and herbs

Ingredients
  

  • 5 vine-ripe tomatoes chopped
  • 2 green onions sliced
  • 1 tbsp. red onion very finely diced
  • 1 large clove garlic minced (or 2 small)
  • 1/2 cup parmesan cheese
  • 1 bunch fresh basil chopped, (about ¼ to 1/3 cup)
  • 1/2 tsp. salt
  • 1/8 tsp. ground black pepper or more to taste
  • 1 tbsp. olive oil
  • 2-4 tsp. balsamic vinegar to taste
  • 8 oz. box sea shell or other pasta cooked and drained, (approximately 3 cups cooked pasta)
  • 2 tbsp. parmesan cheese for garnish, if desired
  • 1 tbsp. fresh basil leaves for garnish, if desired

Instructions
 

  • Cook pasta according to package directions using the shorter amount of time required (or al dente).
  • Drain, rinse with cool water to prevent pasta from continuing to cook.
  • In a mixing bowl, place tomatoes, green onions, red onion, garlic, parmesan cheese, basil, salt, pepper, olive oil and balsamic vinegar.
  • Stir to combine and allow mixture to rest for 15 minutes so the flavors infuse.
  • Add cooked pasta and stir to combine.
  • Refrigerate until ready to serve.
  • Garnish with additional parmesan cheese and fresh basil leaves, if desired.
