Peach Doodles
Peach Doodles are such a scrumptious treat. P-E-A-C-H D-O-O-D-L-E-S 🙂 Yes, siree, these delicious cookies are filled with fresh peaches, cinnamon and macadamia nuts, providing a lovely, nutty crunch that’s just wonderful. The flavors work so well together and I guarantee that after one batch, you’ll be making another really soon.

Any of you who follow my blog regularly know we used to have 6 fruit bearing peach trees in our back yard — that is, until we moved in August. I was trying to come up with boatloads of different ways to use all those peaches! 🙂 Before I had to start packing, I made about 20 desserts (including cobblers, cakes, cookies and muffins) that I was handing out to almost everyone that came by the house.
I also gave peach goodies to several people who I had sent meals to, so I was able to use up about a third of the harvest. I was sad that I never got around to the rest, but we were packing and moving night and day for about two and a half weeks. We were glad to be done, and by that time, I really didn’t feel like cooking or baking anything!
Thankfully, as I right this, I’ve gotten my delight for cooking back and have been busy in my kitchen making stuff for us and others for the past couple of weeks. But I sure didn’t do very much that first week or so after we moved. I think I lived on Wendy’s Chili and sandwiches. 🙁
Peach Doodles are easy and delicious cookies that I think you’re whole family will enjoy. They’re a great recipe to make in early fall when peaches are still in season and you have tailgating games you’re trying to make goodies for. These are sure to be gobbled up in no time. I was glad these went to someone else or I would have gobbled up all of them myself!

Cinnamon and macadamia nuts add wonderful flavor to these cookies.
Peach Doodles may not look exceptionally pretty, but they taste great!
Here’s what I did.
I used these ingredients.
Place softened butter in a large mixing bowl. Add sugar, egg, salt, cinnamon, baking powder, baking soda and vanilla.
Cream ingredients with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add peaches and coarsely chopped macadamia nuts.
Stir ingredients with a wooden spoon until combined. Spray cookie sheets with cooking spray. With a small ice cream or cookie scoop, scoop dough and place on prepared cookie sheets.
Bake at 350 for 15-20 minutes or until done. (Some ovens may cook more quickly).
Peach Doodles will soon become a family favorite!
The macadamia nuts add a wonderful crunch to Peach Doodles.

PEACH DOODLES
(My own concoction)
Peach Doodles
Equipment
- 3 18x26" cookie sheet pans
- 1 electric mixer
- 1 large mixing bowl
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 sharp knife to cut, peel and pare peaches
- 1 nut chopper if nuts are not previously chopped
- 1 large cookie scoop
- 1 spatula
Ingredients
- 2/3 cup unsalted butter
- 1 cup granulated sugar
- 1 large egg
- 1 tsp. vanilla extract
- 2 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 2 1/4 tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 cups peaches peeled and finely diced
- 3/4 cup macadamia nuts chopped
Instructions
- In a large bowl, cream butter and sugar, egg, vanilla, cinnamon, baking powder, baking soda and salt until fluffy.
- Stir in the flour, peaches and macadamia nuts until well combined.
- Mixture will be dry.
- Scoop dough with a large cookie scoop and place 3-inches apart onto lightly greased baking sheets.
- Bake at 350˚ for 15-20 minutes or until golden brown.
- Rotate cookie sheets on oven racks every six to seven minutes of baking time.
- Remove to wire racks to cool.

- 2 ½ cups Gold Medal UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 2 ¼ tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. baking soda
- ½ tsp. salt
- 2 cups finely diced, peeled peaches
- ¾ cup chopped Diamond macadamia nuts
- In a large bowl, cream butter and sugar, egg, vanilla, cinnamon, baking powder, baking soda and salt until fluffy.
- Stir in the flour, peaches and macadamia nuts until well combined.
- Mixture will be dry.
- Scoop dough with an ice cream scoop and place 3-inches apart onto lightly greased baking sheets.
- Bake at 350˚ for 15-20 minutes or until golden brown.
- Remove to wire racks to cool.
Peach Doodles are great tailgating cookies in early fall when peaches are still in season.
Every bite is heavenly.
