Peach Caramel Cookies are an explosion of gooey deliciousness! These cookies are filled with peaches, cinnamon and caramel bits. The caramel bits soften while baking so you get tiny bursts of caramel in each bite. These cookies are so decadent and addictive, a plate of five or six is easy to down before you blink your eyes.

I loved the taste of peaches and caramel together. These were truly a wonderful treat. I will tell you the first batch (the one I photographed) I used only 3 cups of flour. Subsequent batches I increased the flour to 3 1/2 cups so the cookies held their shape a little better and weren’t quite so fragile. The taste was great in both cases although I preferred the later batches.

When I was busy making up peach desserts from our six peach trees back in July, I made sure I made several new kinds of cookies. John likes to take cookies with him everywhere and drop them off to friends, so I made several kinds of Peach Cookies and stashed them in the freezer. I got a note back from the person who got these saying how much they enjoyed them. I sampled more than my share and thought they were spectacular.

Each one is ooey, gooey and delicious!

Here’s what I did.

I used these ingredients. I increased the flour on subsequent batches.

Place softened butter in a mixing bowl. Add sugar, brown sugar, eggs, vanilla, salt and baking soda.

Mix with an electric mixer until smooth.

Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add peaches and caramel bits.

Stir ingredients with a wooden spoon to combine.

Scoop ingredients with an ice cream or cookie scoop and place on greased baking sheets.

Bake at 350 about 12-15 minutes or until done.

  • 4 18x26" cookie sheet pans
  • 1 large mixing bowl
  • 1 wooden spoon
  • 1 electric mixer
  • 1 sharp knife to cut, peel and pare peaches
  • measuring cups
  • measuring spoons
  • 1 large cookie scoop
  • 1 spatula

Ingredients
  

  • 3 to 3 1/2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 sticks unsalted butter softened (1 cup)
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 tbsp. pure vanilla extract
  • 2 large eggs
  • 2 cups peaches diced
  • 11 oz. Kraft Caramel Bits

Instructions
 

  • Place butter, sugars, vanilla, baking soda, salt and eggs in a mixing bowl.
  • Mix with an electric mixer until smooth.
  • Stir in flour, peaches and caramel bits until combined.
  • Spray cookie sheets with cooking spray.
  • Scoop dough with a cookie scoop and place on prepared sheets.
  • Bake at 350° about 12-15 minutes or until done.
  • Rotate cookie sheets on oven racks every six minutes of baking time.
  • Cool completely.

Notes

NOTE: The first batch of these cookies I used 3 cups flour. In additional batches, I used 3 ½ cups. I felt adding additional flour helped the cookies set up a little better so they didn’t run on the cookie sheet quite so much.

  • 3 to 3 ½ cups Gold Medal UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 sticks (1 cup) unsalted butter, softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 1 tbsp. McCormick’s pure vanilla extract
  • 2 large eggs
  • 2 cups fresh, diced peaches
  • 11-oz. Kraft caramel bits
Instructions
  1. Place butter, sugars, vanilla, baking soda, salt and eggs in a mixing bowl.
  2. Mix with an electric mixer until smooth.
  3. Stir in flour, peaches and caramel bits until combined.
  4. Spray cookie sheets with cooking spray.
