Buttermilk Cucumber Tomato Salad

Buttermilk Cucumber Tomato Salad is a delightful salad recipe that’s simple, easy, and refreshing. It’s also a terrific way to use up an abundance or tomatoes or cucumbers especially if you have your own garden. It takes a minimum of ingredients and you can have this recipe ready to go in about 10 minutes.

I picked this recipe up while staying at the Broadmoor Hotel in Colorado Springs this past July. My husband’s job required him to be there for a trustee meeting. Since I have family in Colorado Springs, I always love to go. We stayed a few days in Breckenridge before his meetings began, and then stayed at the Broadmoor after that.
The day before we left, a cooking class was scheduled for all the spouses who wanted to attend. Unfortunately, I had hardly slept the night before so I slept in and missed the class. But not before I heard how everyone raved about this salad. There were copies of the salad recipe on the tables for everyone to pick up and I made sure I got one!
There were two chefs doing the cooking demo and one of them brought this recipe from his mother. (My apologies for not knowing his name). His recipe was called “Mom’s Buttermilk Salad.” But since the recipe isn’t my mom’s, I felt it needed a new name. Other than adding additional tomatoes, the recipe is pretty much in tact from the original version.
I made the recipe back in August for our Friday night care group. I was making a Shepherd’s Pie that night and thought this would be a good side dish. I was right. Everyone really liked this very simple salad. While the original recipe only calls for salt and pepper, if you wanted to spice up the recipe with fresh dill or other herbs, I’m sure that would enhance the flavor even more.

Buttermilk Cucumber Tomato Salad is very simple to make yet refreshing.
This salad can be ready in about ten minutes. It’s quick, easy and delicious.
The red onion provides just a tiny bit of bite to the salad.
Here’s what I did.
I used these ingredients. I ended up using the grape tomatoes more as a garnish rather than in the main salad.
Pour buttermilk into a mixing bowl. Add sea salt, pepper, sugar and apple cider vinegar.
Add red onion. Add English cucumbers and tomatoes that have been cut oblique style. If you need directions, you can check out this video.
Stir ingredients to combine and sprinkle generously with additional pepper. Add salt as needed.
Buttermilk Cucumber Tomato Salad is a nice crisp salad that’s a great side dish to make with chicken.
I used English cucumbers and loved the crunch in this salad.

BUTTERMILK CUCUMBER TOMATO SALAD

Buttermilk Cucumber Tomato Salad
Equipment
- 1 medium serving bowl
- 1 wooden spoon
- measuring cups
- measuring spoons
Ingredients
- 2 English cucumbers cut oblique style
- 3 roma tomatoes cut oblique style
- 1/2 cup red onion finely diced
- 1 pint buttermilk
- 1 tsp. pink Himalayan sea salt
- 1 tbsp. granulated sugar
- 1 tbsp. apple cider vinegar
- 1 tsp.. Salt and pepper to taste
- 6 grape tomatoes for garnish, if desired
Instructions
- Combine buttermilk, sea salt, sugar and apple cider vinegar in a medium salad bowl.
- Add cucumbers, roma tomatoes and red onion.
- Stir well to combine.
- Season to taste with salt and pepper.
- Refrigerate at least 2 hours before serving.
