Broccoli Strawberry Salad

Broccoli Strawberry Salad is sensational. This healthy and tasty recipe includes sliced almonds, matchsticks carrots, celery, red onion, grapes, sunflower seed kernels and nitrate-free, uncured bacon, along with strawberries. I use a homemade three-ingredient dressing of Greek yogurt, honey and apple cider vinegar. It’s quick and easy to prepare and can be served with absolutely anything as an excellent side dish.

I have to admit to loving Broccoli salad recipes. I have one with peaches, one with pomegranates and pears, one with cauliflower, one with apples, and my original healthy version. They are each terrific in their own way. I decided I wanted to try one with strawberries and see how it turned out.
It got rave reviews when I served it for our Friday night care group about a month ago. It’s filled with fruit, seeds and nuts plus it has a healthy bacon and dressing so it’s one of those salads I can indulge in and not feel deprived!
All of these ingredients are available year round these days, making it the perfect salad for holidays like Thanksgiving, Christmas or Easter. And, of course, you can serve it anytime during the summer when you’re having backyard BBQs, attending family reunions or potlucks. I would recommend adding the dressing just before serving to keep the veggies and fruit crisp.
I remember the first time I ever sampled a bite of broccoli salad back in the early 1990s. It was so succulent and amazing I knew that it was one of those salads I would want to make frequently. One of the things Louise Bush did with that original recipe was to use half mayo and half yogurt to cut down on the calories. Since then, I almost always make the salad dressing with all Greek yogurt. But it works wonderfully either way. If you need a “knock-their-socks-off” salad for the holidays, I recommend bringing this one! Enjoy.

This salad is chocked full of fresh veggies, fruit, nuts and seeds. It’s so delicious.
This healthy recipe is a great way to get your daily supply of vitamins and nutrients.
Here’s what I did.
I used these ingredients for the salad.
Cut broccoli up into florets and place in a large salad bowl.
Layer with strawberries, grapes, matchsticks carrots, celery, red onion, sunflower seed kernels, sliced almonds and nitrate free, uncured bacon (or use regular bacon). Refrigerate until ready to serve.
I used these ingredients for the salad dressing.
Place Greek yogurt and honey in a mixing bowl. Add apple cider vinegar.
Whisk ingredients to combine.
Just before serving, add salad dressing to salad.
Stir ingredients to combine. Garnish with additional strawberries, if desired.
You can make up this salad early in the day making it easy to serve at dinner time.
Broccoli Strawberry Salad is so scrumptious. It’s wonderful for backyard barbecues, grilling out and potlucks.

BROCCOLI STRAWBERRY SALAD
(My own concoction)
Broccoli Strawberry Salad
Equipment
- 1 large serving bowl
- 1 medium mixing bowl
- 1 whisk
- 1 wooden spoon
- 1 sharp knife to cut vegetables and fruit
- measuring cups
- measuring spoons
Ingredients
SALAD:
- 1 lb. broccoli crowns cut into bite size florets (about 2 large heads)
- 16 oz. container fresh strawberries sliced or diced
- 1 cup celery chopped
- 1 cup matchsticks carrots
- 1 cup grapes halved
- 1 cup almonds sliced or chopped
- 1/3 to 1/2 cup sunflower seed kernels
- 1/3 cup red onion chopped
- 4 slices nitrate & preservative-free bacon fried crisp and broken into small pieces (I used 8-slices bacon)
SALAD DRESSING:
- 1 cup plain Greek yogurt or Icelandic yogurt
- 1/3 cup honey or agave syrup or granulated sugar
- 1/4 cup apple cider vinegar
Instructions
SALAD:
- Layer salad ingredients in serving bowl.
- Refrigerate until ready to serve.
SALAD DRESSING:
- Combine salad dressing ingredients with a whisk and refrigerate until ready to serve.
- Add Greek Yogurt Dressing just before serving to keep vegetables crisp.
