Okay, do you want the best chocolate cookie in the world? Double Chocolate Sea Salt Caramel Cookies are pretty awesome close. 🙂 Truly, these cookies are amazing. They start with my favorite Mrs. Field’s Chocolate Chip Cookie Copycat recipe. I add cocoa to make the cookie chocolaty and then sea salt caramel chips and chocolate chips. Oh yum.

By now, any of you who follow my blog regularly will know I have a ton of Sea Salt Caramel recipes. One plain, (but not plain in flavor!), one with chocolate chips, one with white chocolate chips, one with peanut butter chips, one in brownie form, with a luscious caramel icing (Yum!), another another with peanut butter in brownie form. I can’t get enough of the stuff! And since I still have about 5 or 6 bags of salted caramel chips in my pantry, there’s a good chance that you’ll see a few more renditions before Christmas. 🙂

Back in July, my husband and I stayed in a condo in Breckenridge, Colorado, with my sister and her husband. We had a delightful time. We visit there almost every summer or at least every other summer. One of our traditions is to stop at a local cookie shop and buy an unconscionable amount of cookies–more than anyone should eat in a year! (Only a slight exaggeration). We polish off those cookies as if we were eating our last meal.

One of the cookies I was hoping to drool over was a chocolate sea salt caramel cookie. They sure looked delicious in the case. Unfortunately, when I took a bite of that delicious looking cookie it was soooo salty I almost had to spit it out! Yikes. Talk about disappointing…..

As I said in my post Sea Salt Caramel Chocolate Chip Cookies, I don’t like ratting out businesses, cookbooks or food blogs for that matter. I try loads of new recipes each year. While most recipes turn out pretty well, every now and then one of the recipes is awful. I’ve never had a cookie from that little cookie shop taste soooo badly. In fact, the reason we go there every year is because we love their cookies. Just not this one….

My solution is to see what I can do to make it better (not complain to the establishment or food blogger). Sometimes I will work on a recipe two or three times before I get it right. Rarely do I give up on a recipe entirely. I said to myself in response to those awful cookies in Breckenridge: “Surely I can do better than that?” So I set out to try to make a delicious chocolate cookie with both chocolate chips and sea salt caramel chips. Double Chocolate Sea Salt Caramel Cookies were the result.

Truly, these cookies turned out incredibly delicious. However, if you want mind-blowing chocolate addiction overload then, by all means, use two cups of chocolate chips instead of just one!

With these Double Chocolate Sea Salt Caramel Cookies the bottom line was to not overdo it with the salt! I thought the cookies turned out absolutely scrumptious. I highly recommend them for tailgating parties, Christmas cookie exchanges or anytime you need to bring a dessert to a potluck. Everyone will rave over them. I guarantee that you won’t have one cookie left over!

I used these ingredients. I actually used 1 1/2 bags of salted caramel chips but you can’t tell from this picture. While I only used one cup of chocolate chips, if you want an explosion of chocolate flavor, then use the whole bag of chocolate chips in the recipe!

Soften butter. Add eggs, sugar, brown sugar, cocoa, vanilla, salt, baking soda and baking powder.

Cream with an electric mixer until smooth and creamy.

Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add chocolate chips and sea salt caramel or salted caramel chips.

Stir ingredients well to combine.

Spray cookie sheets with cooking spray. Roll dough into balls and place on prepared cookie sheets.

Bake at 350 about 13-15 minutes or until done.

  • 3 18x26" cookie sheet pans
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • 1 spatula
  • measuring cups
  • measuring spoons

Ingredients
  

  • 1 cup unsalted butter softened (2 sticks)
  • 1/2 cup granulated sugar
  • 1 1/2 cups brown sugar packed
  • 2 large eggs
  • 2 1/2 tsp. real vanilla extract (no imitation vanilla flavoring)
  • 3 1/3 cups UNBLEACHED all-purpose flour (Bleached flour toughens baked goods)
  • 1/3 cup cocoa
  • 3/4 tsp. sea salt
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 3 cups sea salt caramel chips
  • 1 cup chocolate chips

Instructions
 

  • Preheat oven to 350°.
  • In a large mixing bowl, mix the butter, sugars, eggs, vanilla, cocoa, salt, baking powder and baking soda with an electric mixer until smooth.
  • Stir in flour, sea salt caramel chips and chocolate chips with a wooden spoon to combine.
  • Stir ingredients thoroughly; this may take 4-5 minutes to work in all the flour.
  • Shape dough with hands into golf ball-sized dough balls and place a couple inches apart on greased cookie sheets.
  • Bake for 13-15 minutes or until edges are light brown.
  • Rotate cookies on racks every six to eight minutes while baking.
  • Cool completely.

Notes

NOTE: There are times when I’m making a double batch of this recipe where I have to add an additional quarter to half cup of flour in order to be able to roll the dough into balls. If the dough gets too sticky. Add a little flour to the batter.
 
NOTE: If you want an incredibly rich cookie, then use two cups of chocolate chips instead of one.
