Funfetti White Chocolate Sandwiches
Well, I hit the gold mine with this delicious recipe! Funfetti White Chocolate Sandwiches are rich, sugary, decadent and out-of-this-world terrific. And guess what?? They only use six ingredients! That’s right, just six ingredients. They’re so easy and yet these were one of those cookies everyone talked about when we gave out our Christmas baskets this year. (They actually use seven ingredients if you can’t locate a 17-ounce box of cake mix–because a little flour is added).

My husband and I go on a baking spree every year from November to December. We produce all the goodies for our annual Christmas Cookie Extravaganza during that time period. I baked almost every single day for three straight weeks. He baked on weekends and the week of Thanksgiving. Our goal: we put together over 150 gift bags of a baker’s dozen cookies for the neighbors in our development. The gift bag also included a personal letter from us, recipes (of course!), and the small devotional Christmas booklet called The Christmas Code.
John made the deliveries and got to meet a lot of great folks we don’t get to see as much since they are in different areas in our development. Everyone was tickled pink to receive the goodies and many told us how much they appreciated the devotional book about Christmas too.
While I baked 12 different kinds of cookies for our neighbors, I made about 100 extras of each of those cookies for the Christmas cookie baking we give to family, church friends and co-workers. Then I baked another six or so cookies (about 300 each) so I would have enough for all the trays, buckets and popcorn tins full of cookies we give out or ship out each year.
It is a labor of love. And while I’m not a spring chicken any more, I want to continue doing it until I’m no longer physically able to do so. I think my husband still thinks of me as in my 20s or something because he always seems to have plenty of people to include in our yearly baking list. Regardless, I survived on a lot of prayer and God’s grace.
This past weekend I had one of the staff members of our church come up to me and tell me these were his favorite cookies. He couldn’t stay out of them. Now these Funfetti White Chocolate Sandwiches are whoppers. They’re like eating three cookies at once. They are LOADED with sugar and highly addictive he assured me. Plus you get a little dose of white chocolate and a big dose of sprinkles in every bite. Who doesn’t enjoy chocolate or sprinkles?
The terrific thing about this monster of a cookie is that it’s really very easy to make up. It doesn’t have a ton of steps you have to undertake. If you’re looking for a delightful cookie to make this holiday season for Christmas Cookie Exchanges, holiday or work parties or to share with family and friends, this cookie has to be it! But be warned! These cookies are addictive. You won’t want to stop after just one. 🙂

These amazing cookies use only six ingredients. They’re so easy!
Funfetti White Chocolate Sandwiches are great for the holidays.
Here’s what I did.
I used these ingredients, plus flour. You need about 17-ounces of cake mix, but many of the cake mixes these days have cut down the amounts to keep the costs the same. I used about 1/4 cup additional flour per batch to get the right consistency.
I used both the confetti cake mix and the funfetti cake mix because I was making 20 batches at a time and couldn’t find 20 boxes of either one of these in one store.
Make sure you locate real white chocolate chips–not vanilla chips or premiere white baking chips. Those chips don’t have cocoa in them. I find mine at Kroger. But most stores in the Dallas Metroplex don’t carry them. Only Kroger and Trader Joes.
Pour the cake mix into a large mixing bowl. Add flour if you need it because your cake mix is less than 17-ounces. (This shows ten boxes).
Add eggs and oil. Stir well with a spoon to combine.
I actually find it better to combine the eggs with the cake mix and flour and then add just enough oil to moisten the dough.
Add funfetti sprinkles and white chocolate chips. Try to get the sprinkles without all the purples and deep blue colors as they will color the dough too much.
Stir with a large spoon to combine.
Roll the dough into balls and place on greased cookie sheets.
Bake at 350 for about 15 minutes or until done. (Because I was baking four racks at a time with 24 cookies per cookie sheet, my cookies took 24-30 minutes to bake completely. I rotated the racks every 8 minutes).
Allow cookies to cool completely. Place on wire racks.
Find two cookies of almost the same dimensions. Spread icing on the bottom of one of the cookies.
Top with other cookie and then roll the cookie on its side in additional sprinkles so that the sprinkles adhere to the icing in the cookie.

- 1 18x26" cookie sheet pan
- 1 large mixing bowl
- 1 wooden spoon
- 1 spatula
- measuring cups
- measuring spoons
- 1 small bowl
Ingredients
- 15.25 oz. box funfetti or confetti cake mix (see note below)
- 1/4 cup UNBLEACHED all-purpose flour
- 3 tbsp. canola oil or use coconut oil or avocado oil
- 2 large eggs
- 1 cup white chocolate chips not vanilla chips or premiere white baking chips
- 1/2 cup funfetti sprinkles (not non-pareils)
- 16 oz. can vanilla frosting or funfetti frosting or rainbow chip frosting
- 1/2 cup funfetti sprinkles to roll cookies in
Instructions
- Preheat oven to 350°.
- In a large mixing bowl, mix the cake mix, flour and eggs.
- Stir in just enough oil to moisten the batter.
- Stir in funfetti sprinkles and white chocolate chips with a wooden spoon to combine.
- Shape dough with hands into golf ball-sized dough balls and place a couple inches apart on greased cookie sheets.
- Bake for 13-15 minutes or until edges are light brown.
- Rotate cookies on racks every 6-8 minutes while baking.
- Cool cookies completely; spread frosting generously on the bottom of one cookie.
- Top with an additional cookie of similar shape.
- Place funfetti sprinkles into a bowl.
- Roll cookies in sprinkles so they adhere to the icing.
