Chicken Salad Lettuce Wraps
Chicken Salad Lettuce Wraps are just so awesome. This is absolutely one of my favorite ways to eat Chicken Salad. I can gobble these wraps up in nothing flat! There is something about topping my favorite Chicken Salad recipe with mild banana pepper rings. The combination of flavors is just so scrumptious. Just that little bit of extra bite makes these wraps to die for! I also pared off a couple of hundred calories because I rolled the chicken salad in lettuce leaves rather than spreading it on bread. These crunchy wraps are just out-of-this-world good!

My chicken salad is quite crunchy because I add red bell pepper, celery and red onion. It’s flavored with sweet pickle relish (I try to find a healthier one without high fructose corn syrup) and mayonnaise. I used to use Miracle Whip but it contains HFCS so I’ve stopped using it. You can use leftover rotisserie chicken or some chicken from cooking off a whole chicken (which is what I did). Plop some chicken salad in a large red or green leaf lettuce leaf. Add two or three mild pepper rings (patted dry) and then roll up and secure with toothpicks.
If you’re looking for a terrific way to have a healthy lunch, Chicken Salad Lettuce Wraps fill the bill! These wraps are gluten free and a much healthier option than eating this on bread, croissants or pita bread. I made several of them and refrigerated them for later. Then I pulled them out as needed for lunches later in the week. These wraps can be a little messier than serving on bread, but oh, so worth it. I could eat a hundred of ’em. 🙂

These lettuce wraps are perfect for a healthy, low calorie lunch.
Plop chicken salad on a leaf of lettuce. Then top it with mild pepper rings and wrap it up like a burrito. Secure each wrap with toothpicks. Yum.

Here’s what I did.
I used these ingredients. I recommend finding the largest leaves of lettuce possible to make it easier to roll the lettuce.
Dice up chicken very small.
Add celery, red bell pepper, red onion, mayonnaise, sweet relish, salt and pepper.
Stir ingredients to combine.
Place salad pepper rings on paper towels to drain. Pat dry. Place chicken salad on a large lettuce leaf. Place two or three on top of the chicken salad.
Fold the ends together. (I ended up breaking off some of the stem).
Roll lettuce leaf like a burrito.
Secure with toothpicks.
Serve lettuce wraps with red pepper strips, additional mild pepper rings or your favorite veggies.

Chicken Salad Lettuce Wraps
Equipment
- 1 large mixing bowl
- 1 wooden spoon
- 1 sharp knife to cut vegetables
- measuring cups
- measuring spoons
- toothpicks
Ingredients
- 2 cups chicken diced cooked
- 1/2 cup Just Mayo mayonnaise or Hellmann's Mayonnaise
- 1/4 cup organic sweet pickle relish
- 1/4 cup red onion diced
- 1/2 red bell pepper diced
- 2 ribs celery diced
- 1/2 tsp. Salt and pepper to taste
- 10 large green leaf lettuce leaves washed and patted dry
- 1/2 cup mild pepper rings as desired
Instructions
- Combine chicken, mayonnaise, sweet pickle relish, onion, bell pepper, celery and salt and pepper in a large mixing bowl.
- Spread about 1/3 cup chicken salad in the middle of each lettuce leaf.
- Top with two or three mild pepper rings on top.
- Fold sides in and then roll (similar to a burrito).
- Secure with toothpicks.
