Back in May, our church hosted our annual Boot Scootin’ party. Along with lots of food, there’s line-dancing/square-dancing Texas style. It’s a lot of fun. I promised several of the folks in our church who are on gluten free diets that I would make foods they could enjoy. To that end, I made a 24-Hour Layered Salad, a Bacon Macaroni Salad (with gluten free pasta), and this Gluten Free Blackberry Dump Cake Cobbler.
This cobbler was so popular that there was not even a spoonful left once dinner was over. In fact, I had several people come up to me and tell me how much they loved the cobbler. One of the nice things about this recipe is it has only 5 ingredients. Plus, it only took 5 minutes to throw together. It’s one of the easiest, yet most delicious cobblers ever.
If you’re looking for a fabulous dessert for Labor Day, potlucks or backyard barbecues, this dessert will do it. Gluten Free Blackberry Dump Cake Cobbler is also a terrific recipe for family and company dinners. I topped the cobbler with ice cream for serving. However, you do need to check labels to make sure the ice cream you purchase is gluten free if you need it to be. All in all, this cobbler is one of the most satisfying desserts you’ll ever eat. Just saying…. 🙂

Hi – I have fresh blackberries and would love to use them in this recipe but have no idea how it would differ from the pie filling…any ideas?

Hi, Angi. I think you would need about 4 to 6 cups of fresh blackberries. I would put them in a large sauce pan with about 1 to 1 1/2 cups sugar, 3 heaping tablespoons of gluten free flour (or about 1/2 cup) and some water. Maybe about 1/2 to 1 cup. Start with the lowest amount first and only add more as needed. Cook over low to medium heat until the mixture cooks down. This will probably take 15-20 minutes, but I’m just guessing. When it’s cooked down like pie filling, then spread it into the pan and follow the rest of the directions. I’m sure it will turn out wonderfully. If you have an overabundance of blackberries that you want to use up, you can use more. Or you may want to check out some of my recipes for cherry cobbler or peach cobbler and substitute the blackberries instead. Hope it turns out well for you.
