Caramel Blondies
Caramel Blondies are the BEST! Truly, these delicious bar-type cookies are awesome. They’re filled with Ghirardelli caramel chips for dynamite flavor and texture. I started with one of my favorite chocolate chip cookie dough recipes. But instead of chocolate chips I used caramel chips instead. Yum-O! These turned out so mouthwatering and they’re not too difficult to make either.

Early last summer I found three bags of Ghirardelli caramel chips on deep discount close out. Like 50 cents per bag! I couldn’t resist a sale like that. So, I snatched up all three bags figuring I’d make something with them eventually. Eventually came around July when it was time to go on a baking spree and fill up our freezer again. I believe these jewels are long gone now, but let me tell you, I drooled over them. Yes, they were perfect topped with ice cream and drizzled with additional caramel sauce. Yes, I would make them over and over again. Yes, you’re gonna love ’em. 🙂

Caramel Blondies will have you drooling after the first bite!
These cookies are filled with Ghirardelli caramel chips. They are so awesome!
Caramel Blondies are terrific with scoops of ice cream and drizzled with caramel sauce.
Each forkful will have you salivating.
Here’s what I did.
I used these ingredients.
Soften butter. Add sugar, brown sugar, eggs, vanilla, baking soda and salt.
Cream with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. (Bleached flour toughens baked goods.) Add Ghirardelli caramel chips.
Stir ingredients with a wooden spoon to combine.
Press ingredients into a greased 13×19″ cookie sheet with an edge.
Bake at 350 about 40-50 minutes or until a toothpick inserted in center comes out clean.
Cool blondies before cutting into bars.
These cookies are terrific for tailgating parties. They transport very well in plastic containers and don’t crumble and fall apart easily.

Caramel Blondies
Equipment
- 1 11x17" jelly roll pan
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
- 1 1/2 cups unsalted butter softened (3 sticks)
- 1 1/2 cups brown sugar firmly packed
- 3/4 cup granulated sugar
- 3 large eggs
- 2 tsp. vanilla extract (real, not imitation)
- 4 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1 1/2 tsp. baking soda
- 1 tsp. sea salt
- 24 oz. bag Ghirardelli caramel chips (two 12-ounce bags)
Instructions
- Preheat oven to 350°.
- Grease or spray a large 11x17” jelly-roll pan with cooking spray.
- In large bowl, combine butter, sugars, vanilla, eggs, salt and baking soda.
- Beat at medium speed with an electric mixer until fluffy.
- Stir in flour and caramel chips with wooden spoon until combined.
- Spread and press down cookie dough into prepared cookie sheet.
- Bake at 350 for 40-50 minutes, or until lightly browned and a toothpick inserted in center comes out clean.

The caramel chips just seem to explode with flavor.
Caramel Blondies pack up nicely for picnics, too.
