Caramel Chocolate Chip Blondies
Caramel Chocolate Chip Blondies are sensational. These luscious brownies include both caramel chips and chocolate chips. They are absolutely divine! These cookies start with one of my favorite Chocolate Chip Cookie recipes. But the addition of caramel chips makes them super special. This is a truly drool-worthy dessert that will make you do your happy dance. 🙂

Back in late spring or early summer, I picked up several bags of Ghirardelli caramel chips when they went on deep discount. (About 50 cents per bag!) I used them in Peach Caramel Blondies, Caramel Blondies and these Caramel Chocolate Chip Blondies. What an amazing combination of flavors! Yes, caramel chips are the best. 🙂
I made two versions of these blondies. In the first one I added a quarter cup each of caramel chips and chocolate chips over top of the blondies before baking. In the second version, I stirred all of the chips into the batter. They were both excellent. They may be a little prettier with the chips added over top. The cookies are also a little gooier that way. But each way is irresistible.
I sent these goodies along with a Chicken Noodle Vegetable Soup and Herbed Cheese Bread to some friends who were moving out of their house. They loved these delicious goodies and had enough food to last a couple of days. They are one of those families who never mind being my guinea pigs. They love eating my cooking and are always grateful. 🙂
If you like caramel and chocolate together (and who doesn’t?), you’ll rave over these scrumptious Caramel Chocolate Chip Blondies. Add some ice cream and caramel sauce and you’re good to go. 🙂

I assure you, after one bite, you’ll want to eat a whole stack of these jewels.
Caramel Chocolate Chip Blondies are marvelous with a little ice cream and caramel sauce drizzled over top.
Here’s what I did.
I used these ingredients.
Place softened butter, sugar, brown sugar, eggs, vanilla, salt and baking soda in a mixing bowl.
Cream with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. (Bleached flour toughens baked goods). Add chocolate chips and caramel chips.
Stir with a wooden spoon to combine.
For version 1: Place in a greased 13×19″ baking sheet.
Bake at 350 for 40-50 minutes or until a toothpick inserted in center comes out clean.
For version two: Set aside 1/4 cup each of chocolate chips and caramel chips.
Sprinkle over top of dough before baking.
Bake at 350 for 40-50 or until a toothpick inserted in center comes out clean.
Allow brownies to cool completely before cutting into bars.
Drizzle with caramel sauce before serving, if desired.

Caramel Chocolate Chip Blondies
Equipment
- 1 11x17" jelly roll pan
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
- 1 1/2 cups unsalted butter softened (3 sticks)
- 1 1/2 cups brown sugar firmly packed
- 3/4 cup granulated sugar
- 3 large eggs
- 2 tsp. vanilla extract (no substitutes)
- 4 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1 1/2 tsp. baking soda
- 1 tsp. sea salt
- 12 oz. pkg. Ghirardelli caramel chips (if desired, set aside 1/4 cup for top)
- 12 oz. pkg. chocolate chips (if desired, set aside 1/4 cup for top)
Instructions
- Preheat oven to 350°.
- Grease or spray a large 11x17” jelly roll pan with cooking spray.
- In large bowl, combine butter, sugars, vanilla, eggs, salt and baking soda.
- Beat at medium speed with an electric mixer until fluffy.
- Stir in flour, caramel chips and chocolate chips with wooden spoon until combined.
- Spread and press down cookie dough into prepared cookie sheet. (See note below).
- Bake at 350 degrees for 40-50 minutes, or until lightly browned and a toothpick inserted in center comes out clean.
