Tossed Guacamole Salad

Tossed Guacamole Salad is absolutely awesome! This delicious salad starts with my favorite homemade Guacamole recipe. I added bacon and Feta cheese. Then I mixed it with a delicious honey vinaigrette. Those ingredients were served over a bed of lettuce. This one got an A+ if you ask me. I made this a couple of times and each time I loved it more. I could have eaten the whole salad myself. 🙂

This is a terrific salad to serve company (which is what I did). Because it really has to be eaten up right away. I recommend refrigerating the lettuce separately from the Guacamole mixture. Then toss the two together just before serving. If you enjoy the taste of Guacamole or avocados you will rave over this salad. Plus, who doesn’t enjoy a little bacon or Feta cheese thrown into the mix? Bacon makes everything better.
Truly, I found this salad so amazing it was wonderful comfort food for me. I ate several large plates of the stuff. I served it to our young adult (college) group for lunch after church in March. They gobbled up this salad and loved the salad dressing. But then, they love my salads. I have hundreds of them on my blog and I’ve been pulling them out regularly to share with this group.
Tossed Guacamole Salad should be on your monthly rotation menu. It’s even hearty enough to be served as a main dish. If you want a little salad with your Guacamole….just saying. Tex-Mex never tasted so well as in this scrumptious salad. Ahhhh, give me a fork!

Here’s what I did.
I used these ingredients for the salad, plus lemon and cilantro.
Place lettuce mix in a large salad bowl. Refrigerate until ready to mix and serve salad.
Peel and chop avocados. Place in a large mixing bowl. Drizzle lemon juice over top.
Add crisp, cooked bacon, Feta cheese, cilantro, diced red onion and chopped tomatoes.
I used these ingredients for the salad dressing, plus honey.
Combine all ingredients except honey in blender.
Pulse about 15 seconds. Add honey.
Pulse again until all the ingredients are emulsified.
Add Honey Vinaigrette to the Guacamole ingredients in the mixing bowl.
Stir ingredients to combine. Refrigerate until ready to serve. (Not more than a few hours).
Place Guacamole ingredients on top of the bed of lettuce in salad bowl.
You can make the salad like this without mixing it together first. However, it tasted much better mixed since the dressing saturated the ingredients better.
The Honey Vinaigrette is perfect for this salad.

TOSSED GUACAMOLE SALAD
(My own concoction)
Tossed Guacamole Salad
Equipment
- 1 large skillet to fry bacon
- 1 sharp knife to cut vegetables
- 1 large salad bowl with tongs
- 1 blender
- 1 mixing bowl
- measuring cups
- measuring spoons
Ingredients
SALAD:
- 2 bags torn lettuce greens (I used a Romaine mix and butter bliss)
- 1 large tomato diced, or 1 cup grape tomatoes
- 1/4 to 1/3 cup red onion diced finely, or sliced and separated into rings
- 6 bacon strips cooked and crumbled
- 2 large ripe avocados peeled and cubed
- 1 cup feta cheese
- 1/2 lemon
- 1/4 cup fresh cilantro torn (or more if desired)
HONEY VINAIGRETTE:
- 1/3 cup avocado oil
- 2 tbsp. apple cider vinegar
- 1/4 cup honey
- 1/2 tsp. sea salt
- 1/8 tsp. ground black pepper
- 2 to 3 drops hot pepper sauce or, as desired
Instructions
SALAD:
- In a large bowl, place avocados.
- Drizzle fresh lemon juice over top.
- Add diced tomatoes, red onion, Feta cheese, cilantro and bacon pieces.
- Pour salad dressing ingredients into the bowl with tomatoes and avocados.
- Toss gently to combine.
- Place lettuce greens in a salad bowl.
- Place avocado mixture over top of greens.
- Toss ingredients to coat well.
- Serve immediately.
HONEY VINAIGRETTE:
- In a blender, combine avocado oil, honey, vinegar, salt, pepper and hot pepper sauce.
- Pulse until smooth.
