Almond Joy White Chocolate Cookies
Oh, my! Almond Joy White Chocolate Cookies are sensational. These lovely jewels are everything you want in a cookie. They don’t have actual Almond Joy Bars chopped up into the cookie. But they’re made with a lot of the same fantastic flavors you find in Almond Joy Bars. Chocolate. Coconut. Almonds. But these have the additional of White Chocolate. (Not vanilla chips). They are yummy on steroids.

Truthfully, these cookies are soft, yet stuffed with all kinds of delicious extras. I started with a Triple Chocolate Fudge Cake Mix. This mix had cocoa, chocolate pudding and actual chocolate chips in the batter. Yes, it was rich with chocolate. Along with oil and eggs, I added coconut, white chocolate chips and sliced almonds. There were almost too many extras to fill the cookie dough! I actually had to come back after forming all the cookies and add white chocolate chips to the tops of each one. I wanted to use them all up. You can cut back and use only 1 cup of white chocolate chips or 1/2 cup almonds, …but I wanted the full flavor and texture of all of them. So that’s what I did.
I will tell you, if you’re a chocoholic you will LOVE these cookies. If you enjoy the flavors of Almond Joy Bars, you’ll RAVE over these cookies. And, if you have a sweet tooth, these cookies will CURE any sweet tooth craving you have. They are really awesome. Another nice thing about these cookies is they use only six ingredients. So they’re really easy to mix up.
Almond Joy White Chocolate Cookies are terrific for summer holidays and parties. Bring a plate everywhere you go and you’ll find them gobbled up before you can blink your eyes. They’re that good.
Almond Joy White Chocolate Cookies are heavenly.
These cookies were soft in texture, but crunchy because of the almonds.
You’ll be drooling from the first whiff of these goodies.
Here’s what I did.
I used these ingredients.
Pour Triple Chocolate Fudge cake mix into a mixing bowl. Add eggs and oil.
Stir to combine. Batter will be very thick.
Add white chocolate chips, coconut and sliced almonds.
Stir ingredients to combine.
Spray cookie sheets with cooking spray. Roll cookie dough into balls. Stuff as many of the white chocolate chips and almonds into each ball as possible. Place on prepared cookie sheets.
Bake at 350 for 13-15 minutes or until done. Rotate the trays every 6-7 minutes.
Almond Joy White Chocolate Cookies are rich, decadent and irresistible.

ALMOND JOY WHITE CHOCOLATE COOKIES
(My own concoction)
Almond Joy White Chocolate Cookies
Equipment
- 2 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 wooden spoon
- measuring cups
- 1 spatula
Ingredients
- 15.25 oz. box Betty Crocker Triple Chocolate Fudge Cake Mix
- 1/2 cup canola oil or vegetable oil or avocado oil
- 2 large eggs
- 11.25 oz. pkg. white chocolate chips NOT vanilla chips
- 1 cup coconut
- 1/2 cup almonds sliced, (see note below)
Instructions
- Preheat oven to 350 degrees.
- Combine cake mix, oil and eggs.
- Stir in white chocolate chips, coconut and almonds.
- Spray cookie sheets with cooking spray.
- Roll cookies into balls or scoop cookie dough with a scoop and place on prepared baking sheets.
- Bake at 350° for 13-15 minutes or until done.
- Rotate cookie sheets on oven racks every seven minutes while baking.
- Cool completely.

To evenly distribute chocolate chips, nuts, and coconut throughout batter, they must be stirred into the dry cake mix prior to adding the eggs and oil. Then mix everything together and no leftover chips at bottom of bowl!
