Carrot Cake White Chocolate Cookies
Oh, my, what can I say about Carrot Cake White Chocolate Cookies? These cookies are absolutely delectable. You have the wonderful flavors of Carrot Cake but in a delicious cookie version. This cookie is not cakey. The texture is like a cookie. It’s loaded with white chocolate chips (NOT vanilla chips). It makes the cookie really rich.

I tried this with two different Carrot Cake-Cake Mixes. The Betty Crocker Delights Carrot Cake Mix worked beautifully. The Duncan Hines Signature Decadent Carrot Cake Mix did NOT work. Unfortunately, my pictures reflect the Duncan Hines version because that was the only kind of Carrot Cake mix I could find at the time. My husband came home with the other version, but I forgot to retake the pictures. The Duncan Hines cookies might work with less oil. But for this recipe, the cookies spread out too much while baking. Usually a result of too much sugar and oil and not enough flour to hold everything together.
John took these cookies (the good batch) to some friends of ours in Atlanta a few weeks ago. He served as a trustee for John’s company for almost a decade. We would see each other at meetings a couple of times a year. We have had dinner with them many times over the years. John stayed overnight with them and dropped off a container of these goodies while there. They love getting our baked goods. We just like hanging out with them. 🙂

Carrot Cake White Chocolate Cookies are scrumptious!
Carrot Cake White Chocolate Cookies are great for tailgating or office parties.
Each cookie is loaded with white chocolate chips (NOT vanilla chips).
Here’s what I did.
I used these ingredients. But instead of the Duncan Hines cake mix, I used the Betty Crocker version instead.
Pour cake mix into a mixing bowl. Add eggs and oil.
Stir ingredients to combine.
Add white chocolate chips (NOT vanilla chips).
Stir ingredients again to combine. Roll into balls and place on greased cookie sheets.
Bake 13-15 minutes at 350, rotating pans every six to seven minutes while baking.

Carrot Cake White Chocolate Cookies
Equipment
- 2 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 wooden spoon
- measuring cups
- 1 spatula
Ingredients
- 15.25 oz. box Betty Crocker Carrot Cake cake mix NOT the 21-oz. pkg. Duncan Hines Carrot Cake Mix (see note below)
- 1/3 cup canola oil or vegetable oil or avocado oil
- 2 large eggs
- 11.25 oz. pkg. white chocolate chips NOT vanilla chips
Instructions
- Preheat oven to 350 degrees.
- Combine cake mix, oil and eggs.
- Stir in white chocolate chips.
- Spray cookie sheets with cooking spray.
- Roll cookies into balls and place on prepared baking sheets.
- Bake at 350° for 13-15 minutes or until done.
- Rotate cookie sheets on oven racks every 7 minutes while baking.
- Cool completely.

I did try the recipe. I made one change, added one table spoon sugar.
The cookies were great. I plan to make the recipe this week using German Chocolate Mix (add sugar) with butterscotch chips. I make the large cookies. one dozen to a mix. At my favorite grocery there are 10 large cookies for $6.98.
Using this recipe I can have many varieties of cookies. Catching the mix on sale is great.
