Creamy Cauliflower Casserole
I have an outrageously delicious Cauliflower Casserole recipe for you today! Creamy Cauliflower Casserole. This amazing side dish includes both Parmesan (or Romano) and Cheddar cheeses. Plus, it has Ritz crackers crushed up and added into the recipe (not as a topping). Spectacular, indeed!

I was looking through several of my Gooseberry Patch Cookbooks a few months ago trying to get ideas for side dishes. When I stumbled across this recipe it sounded so enticing I knew I needed to give it a try. It was delectable. I served it the first time for our regular Friday night care group along with Slow Cooked Pepper Steak. We have some folks in our group who will eat anything. We have some that are a little picky. And we had at least two that don’t ever eat cauliflower. I begged them to eat just one bite to give me their take on the recipe.
Even those who NEVER eat cauliflower loved this recipe. The Ritz Crackers really pop in this casserole. In fact, both of these guys decided to go back for a real serving! Anyone who enjoys cauliflower anyway will find this side dish perfect for company or holiday menus. It doesn’t take long to throw together and it really tastes heavenly.
The second time I served it with Apricot Glazed Ham for our Young at Heart group. That group will eat just about any vegetable and they sure loved this recipe. It’s hearty, filling and so utterly satisfying.
This is a fantastic side dish for Thanksgiving or Christmas. Especially if you’re looking for something besides the same old corn or green bean recipes. Seriously, this cauliflower dish will knock your socks off! And, you may even find the picky eaters at your table will love Creamy Cauliflower Casserole as well.
Creamy Cauliflower Casserole is outrageously delicious!
Even those who don’t eat cauliflower will enjoy this amazing casserole.
I served it with Slow Cooked Pepper Steak and Rice.
Here’s what I did.
I used these ingredients.
Wash cauliflower and cut into florets. Place in a large sauce pan or Dutch oven.
Add one inch of water and bring to a boil. Steam or heat for about 5 minutes.
Drain cauliflower and place in a large mixing bowl.
Add crushed Ritz Crackers, cheddar cheese, diced red and green bell pepper, sour cream and pink Himalayan sea salt.
Stir ingredients to combine.
Pour ingredients into a greased two-quart baking dish.
Top with Parmesan or Romano cheese.
Bake at 325 degrees for about 25-30 minutes or until done.
Creamy Cauliflower Casserole is so heavenly. It’s a great side dish to serve when company is coming for dinner.
Every forkful is utterly mouthwatering.
We served it with Slow Cooked Pepper Steak, but it’s terrific for holiday menus too.

CREAMY CAULIFLOWER CASSEROLE
(Recipe adapted from Gooseberry Patch, Mom’s Favorite Recipes, Buttery Cauliflower Casserole)
Creamy Cauliflower Casserole
Equipment
- 1 large sauce pan or stock pot with lid
- 1 colander
- 1 large mixing bowl
- 1 wooden spoon
- 1 8x12" glass baking dish or two-quart casserole dish
- measuring cups
- measuring spoons
- 1 sharp knife to cut vegetables
Ingredients
- 1 head cauliflower broken into florets
- 1 cup sour cream
- 1 cup sharp cheddar cheese shredded
- 1/2 cup Ritz crackers crushed
- 1/4 cup green bell pepper diced
- 1/4 cup red bell pepper diced
- 1 tsp. sea salt
- 1/2 cup parmesan cheese grated (I used grated Romano cheese)
Instructions
- Place cauliflower in a large saucepan filled with one inch water.
- Heat/steam until tender, about 5 minutes.
- Drain in colander.
- Transfer mixture to a mixing bowl.
- Add sour cream, cheddar cheese, Ritz crackers, bell peppers and salt.
- Spoon ingredients into a a greased 8x12” glass baking dish.
- Sprinkle with parmesan cheese (Romano or Italian cheese blend).
- Bake at 325 degrees for 30 minutes.
