Lemon Pepper Chicken

Lemon Pepper Chicken is awesome. Seriously. This amazing 3-ingredient recipe is one of our favorite ways to eat chicken. It’s so quick and so easy. We throw it on the grill and it’s done in about 20-25 minutes. It’s the perfect main dish when you’re grilling out with friends. It’s great to serve when you’re having company over for tailgating parties as well.

My husband and I work with another couple in our church with our college age/young adults. Every Sunday evening they host dinner at their house. It’s followed with Bible study and prayer. Debra’s husband, Jeff, has made this chicken many times over the past year or so. Finally, I asked them to tell me exactly what they do to make the recipe. I took the notes down on my cell phone.
We started out following their basic directions. But my husband thought it would be a lot easier to actually combine the mayonnaise and most of the lemon pepper and wipe it on the chicken pieces individually. He was right. This is one of those recipes where you need rubber gloves. Your hands will be a mess otherwise.
So first off, you rub the lemon pepper mixture into the individual pieces of chicken. Then sprinkle both sides of the chicken with additional lemon pepper before grilling. The chicken needs to be turned about every five minutes during the length of cooking time, so it doesn’t burn and scorch too much. Voila! That’s it.
We used more mayonnaise and less lemon pepper than what Jeff and Debra suggested. But I will give you the basics and you can always change it up a bit if you need to. We grilled bone-in chicken legs and chicken thighs. But you can cut up whole chickens and use all if it, if you prefer.
As it happened, Debra’s grandmother died the end of February. I coordinated a funeral meal in their home. I made up a batch of Lemon Pepper Chicken, Roasted Chicken and Rosemary and Reese’s Chocolate Peanut Butter Bars. There were dozens of other dishes brought by others. Jeff said the Lemon Pepper Chicken turned out great. In fact, he had some of each and enjoyed both chicken dishes.

This easy 3-ingredient recipe is terrific for potlucks or tailgating parties.
Lemon Pepper Chicken is also wonderful for weeknight dinners when you’re short on time. It doesn’t really take that long, and the chicken is also good reheated as leftovers.
Here’s what I did.
I used these ingredients.
Combine mayonnaise and two-thirds of the lemon pepper seasoning.
Using rubber gloves, coat chicken well with mayonnaise mixture.
Place chicken on a cookie sheet.
Sprinkle both sides of chicken with the remaining tablespoon of lemon pepper seasoning (or use more to make sure the chicken is generously covered.)
Place chicken on hot grill. (The mayonnaise will drip down so be careful not to have the temperature too hot so that a fire starts!)
Turn chicken pieces over every five minutes until cooked completely. This will take about 20-25 minutes, depending on what piece of chicken you’re cooking. Chicken breasts will take longer.
Remove chicken to serving platter to serve.

Lemon Pepper Chicken
Equipment
- 1 18x26" cookie sheet pan
- 1 small mixing bowl
- 1 pair rubber gloves
- 1 wooden spoon
- 1 gas grill or electric grill
- measuring spoons
Ingredients
- 30 chicken legs (leave the skin on the chicken)
- 6 tbsp. Hellmann's mayonnaise (NOT Miracle Whip)
- 3 tbsp. Lemon pepper seasoning or more as desired
Instructions
- Spread raw meat on a cookie sheet.
- Combine mayonnaise with two tablespoons lemon pepper.
- Put rubber gloves on.
- Rub mayonnaise mixture over top of each chicken leg or thigh.
- After coating the chicken well, sprinkle final tablespoon of lemon pepper on top and bottom of chicken to coat pieces well.
- Lightly coat the grill with cooking oil.
- Grill chicken about 20-25 minutes, turning chicken every 5 minutes while grilling.
