Blueberry Pecan Bars
Blueberry Pecan Bars are outrageously delicious. These lovely brownies include diced pecans, coconut and dried blueberries. They taste superb and the crunchy texture is addictive. They’re pretty easy to make too. I thought they turned out awesome.

FAMILY UPDATE: For those of you asking me about my husband, John, he is doing extraordinarily well. They are hoping to take him off all the tubes today. For someone who had a stroke on the right side of his brain leaving his left side paralyzed, he is doing beyond what we could have hoped. He can move his arms and legs, wiggle his toes and responds to touch. He can speak, although it sometimes takes a while to get those thoughts across. He has full cognition, although he doesn’t quite understand what has happened to him and why things aren’t working quite as well as before.
For someone who was given up for dead, he is doing marvelously. He still has a long road to go for full recovery. However, we are greatly encouraged by the outpouring of love and affection for us. My FaceBook account has blown up with people sending their good wishes, prayers, and being there to offer encouragement and sympathy. Others have sent text messages, phone calls or arranged meals or lawn care! We thank you from the bottom of our hearts. We are so grateful for the larger community who are helping us deal with this trying situation. We are overwhelmed by your love, generosity, kindness and offers of help. Thank you. We love you all. 🙂
In the very early days of Corona Virus (late February, early March 2020) we were shut in, and I was really bored. I decided to bake up a bunch of assorted cookie type bars. I made about 5 different kinds and loaded them into my freezer. Those include Heath Toffee, Cherry, Cranberry and Coconut. Thankfully, these freeze well because we probably won’t be able to start giving them out until July or August! They’re certainly too delicious not to share with you now.
These cookies are made in a large cookie sheet. They’re perfect for tailgating parties, potlucks, summer holidays or family reunions, since each batch makes 48. (Or you can cut them smaller and get 64-80 servings). If you enjoy coconut, pecans and blueberries, you’ll find these lovely, crunchy cookies irresistible.

Blueberry Pecan Bars are filled with dried blueberries, finely diced pecans and coconut. So yummy.
These crunchy textured brownies are amazing.
Here’s what I did.
I used these ingredients.
Place softened butter in a mixing bowl. Add eggs, brown sugar, sugar, vanilla, salt and baking soda.
Mix ingredients with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. (Bleached flour toughens baked goods). Add coconut, diced pecans and dried blueberries.
Stir with a heavy spoon until well combined.
Grease a 15-1/2″x20″ baking sheet. Press blueberry mixture evenly into the cookie sheet. I had to keep my hands partially moist to achieve this).
Bake at 350 degrees for 25-30 minutes or until a toothpick inserted in center comes out clean. (My pan took about 35-40 minutes.)
The combination of flavors in Blueberry Pecan Bars is irresistible.
This is a great dessert for family reunions or grilling out with friends.

BLUEBERRY PECAN BARS
(My own concoction)
Blueberry Pecan Bars
Equipment
- 1 15x20" jelly roll pan
- 1 mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 1 spatula
- 1 nut chopper if nuts are not previously chopped
- measuring cups
- measuring spoons
Ingredients
- 1 1/2 cups unsalted butter softened (3 sticks)
- 1 1/2 cups light brown sugar firmly packed
- 3/4 cup granulated sugar
- 3 large eggs
- 2 tsp. vanilla extract
- 4 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1 1/2 tsp. baking soda
- 1 tsp. sea salt
- 2 cups sweetened coconut
- 9 oz. pkg. dried blueberries (or three 3-oz. packages)
- 3 cups pecans coarsely chopped (measure after chopping)
Instructions
- Preheat oven to 350°.
- Grease or spray a large 15-1/2"x20” cookie sheet with cooking spray.
- In large bowl, combine butter, sugars, vanilla, eggs, salt and baking soda.
- Beat at medium speed with an electric mixer until fluffy.
- Stir in flour, dried blueberries, coconut and pecans with wooden spoon until combined.
- Stir thoroughly; this may take 4-5 minutes.
- Spread mixture into cookie sheet and pat down firmly.
- Bake at 350 degrees for about 25-30 minutes, or until lightly browned and a toothpick inserted in center comes out clean.
- Cool completely before cutting into bars.
