Grilled Herb Vegetables

Grilled Herb Vegetables are a fantastic side dish. This quick and easy 5-ingredient recipe can be made in 20 minutes total. The only thing you need to start with is thawed, frozen vegetables. Add garlic, olive oil, sea salt and Italian seasoning and you’re good to go.

Now that summer is upon us we grill out a lot! Those of you who live in the south, especially Texas, know what I mean. Temperatures rise into the 90s and 100s on a daily basis. The last thing you want to do is heat up your house by cooking dinner. If you’re grilling out for family or with friends, this easy recipe is a great side dish to add to chicken, ribs or fish.
I actually made this recipe back in May. We had an unseasonably, wonderfully, long spring this year. In 25 years, we’ve never had such a prolonged cool and comfortable spring. Usually we are hitting 90s or close to that most every day in May. Nope. We had so many days in the low 70s (even 60s). It was awesome. Everyone in our neighborhood was out walking, jogging, pushing baby strollers, playing basketball or other outside activity. Most of the time by May, the AC is on and everyone stays inside for the summer.
I served this easy side dish with Garlic Parmesan Chicken, New England Butternut Squash and Reese’s Peanut Butter Chocolate Pie. I took the meal to a neighbor down the street who had surgery. She specifically asked for some healthier options, but didn’t mind at all that I sent dessert. 🙂
I cooked the vegetables on an indoor grill. But you can grill these vegetables just as easily on a gas or charcoal grill. The garlic and Italian seasoning make these vegetables explode with flavor. While the recipe I followed called for Broccoli, Cauliflower and Carrots, I’m sure you can use practically any vegetable you desire. Especially if you have your own garden.
Grilled Herb Vegetables taste delightfully and will be consumed by even the pickiest palate. We loved the way they tasted and turned out. Give them a try the next time you want a healthy, low calorie, gluten free and vegan side for your grilled dinners. You will be more than pleasantly surprised.

I highly recommend this side dish anytime you have your grill going. Especially if you’re looking for lighter, healthier fare.
The veggies are grilled in a foil packet for about 10-15 minutes before serving.
If you enjoy broccoli, cauliflower and carrots anyway, this is a great way to serve them.
Here’s what I did.
I used these ingredients.
Place thawed frozen vegetables into a mixing bowl.
Add garlic, sea salt, Italian seasoning and olive oil.
Stir ingredients to combine.
Cut two long strips of heavy duty foil. Place on top of each other. Add thawed, mixed veggies.
Fold one side over.
Fold the other side over.
Fold edges in and secure the foil tightly. Place on a heated grill.
After about 7 minutes, turn foil packet over and grill other side.
Grill another 7-8 minutes on opposite side. Remove from grill and open foil carefully. Be careful of escaping steam.
If desired, transfer veggies to a serving dish.
Serve Grilled Herb Vegetables with your favorite entree.
Grilled Herb Vegetables are healthy, low calorie, clean eating, gluten free and vegan.
I served Grilled Herb Vegetables with New England Butternut Squash and Garlic Parmesan Chicken. That was one delicious meal!
These veggies are terrific as part of a delicious, comfort food meal. The New England Butternut Squash and the Garlic Parmesan Chicken rounded out the meal so wonderfully.

GRILLED HERB VEGETABLES
(Recipe adapted from Taste of Home, Quick Cooking, 2008)
Grilled Herb Vegetables
Equipment
- 1 large mixing bowl
- aluminum foil
- measuring spoons
- 1 electric grill or gas grill
- 1 wooden spoon
Ingredients
- 20 oz. pkg. frozen California-Blend vegetables (broccoli, cauliflower and carrots), thawed (two 10-ounce packages)
- 1 tbsp. olive oil
- 1 tsp. Italian seasoning
- 1 tsp. freshly minced garlic
- 1/2 tsp. sea salt
Instructions
- Combine all ingredients in a large mixing bowl.
- Transfer mixture to a double thickness of heavy-duty aluminum foil.
- Wrap veggies securely in foil, sealing tightly.
- Grill, covered over medium heat approximately 12-15 minutes, or until veggies test fork tender.
- Turn veggies over on grill about half-way through cooking time.
- Open foil carefully as steam will escape.
- Serve.
