Garlic Green Beans

Garlic Green Beans are so scrumptious. I never would have thought such a simple (basically 4-ingredient) recipe would be so tasty. This one sure was. This side dish includes green beans, a little olive oil, oregano and garlic, along with salt, pepper and water. That’s it. It’s a marvelous side for any kind of entree.

On top of that, this side dish is healthy, low calorie, clean eating, gluten free and vegan. For those on restricted diets or who are health-conscience, this is a great recipe to get your veggies without sacrificing flavor. I love garlic in anything, but adding the oregano was a real game changer. I don’t have any oregano in my herb gardens, but that would be a superior option if you have it. Still this recipe was fabulous using only dried oregano.
Back in May, I made a lot of dinner recipes when we were on lock down for Corona Virus. I served these green beans with a fantastic main dish of Italian Pot Roast with Alfredo Potatoes. This sumptuous meal was one of the best new recipes I’ve tried this year. My neighbor’s wife was out of town for several weeks, so I took him some of this for dinner one night as well. He and John both gave this entire meal a thumb’s up!
Another really nice thing about this recipe is it takes only about 15 minutes total time from beginning to end. That’s with even cutting the tips off the fresh green beans. Granted, I’m pretty fast at doing that, but it’s a wonderfully quick and easy recipe. I recommend it for company as well as family dinners. Simple, easy, quick, delicious. I like that.
Garlic Green Beans are absolutely scrumptious!
This is a marvelous side dish for company or holiday dinners. Especially if you want lighter fare than Green Bean Casserole.
Garlic and oregano along with a little olive oil, season this dish wonderfully.
I served Garlic Green Beans with Italian Pot Roast and Alfredo Potatoes. Yum.
Here’s what I did.
I used these ingredients, plus water.
Wash and rinse green beans. Cut the tips off and place in a large Dutch oven or sauce pan with garlic and water.
Bring to a boil and cook about 8-10 minutes.
Drain water.
Add sea salt, pepper, oregano and olive oil.
Stir ingredients to combine; serve immediately.

GARLIC GREEN BEANS
(Recipe adapted from Taste of Home, Quick Cooking, 2008, “Green Bean Side Dish”)
Garlic Green Beans
Equipment
- 1 large sauce pan with lid
- measuring spoons
- measuring cups
- 1 wooden spoon
- 1 colander
- 1 sharp knife to cut the tips off the green beans and mince garlic
Ingredients
- 1 lb. fresh green beans tips removed
- 2 tsp. minced garlic
- 1/2 cup water
- 2 tbsp. olive oil
- 1 tsp. dried oregano
- 1/2 tsp. sea salt
- 1/4 tsp. ground black pepper
Instructions
- In a large sauce pan over medium-high heat, bring the green beans, garlic and water to a boil.
- Reduce heat.
- Simmer green beans for 8 to 10 minutes or until fork tender.
- Drain in colander; transfer green beans to serving dish (or back to sauce pan).
- Stir in olive oil, oregano, salt and pepper.
- Serve immediately.

Garlic is wonderful for seasoning. Plus, it’s great for combatting colds and sickness. I’ve cooked with it so much over the years.

I’m in the mood for veggies right now and these green beans and also the cabbage soup recipe are just what I wanted. Garlic and oregano…you can’t go wrong with those two flavors!
