I made about 10-15 chocolate pies back in June and July to give away. Of course, I nabbed a few bites of each beforehand. 🙂 After my husband suffered a stroke in early June, we had folks come over to mow our lawn, chauffeur John to his daily neuro rehab in downtown Dallas, and fix things around our house. I gave out a lot of pies to show my appreciation.
Cowboy Cookie Chocolate Pie was just one of the multitude of pies that I gave away. Most of the pies were made with candy bars, but a few were made with cookies like these or Oreos. All of the pies turned out marvelously.

This is a delightful dessert for company or holidays.
The nice thing about this dessert, is it’s so easy, you can whip it up in no time and serve for family dinners, too.
Here’s what I did.
I used these ingredients.
Pour chocolate pudding mix into a mixing bowl. Add half-and-half.
Whisk vigorously for two minutes until thick.
Add Cool Whip or other non-dairy whipped topping.
Stir well to combine.
Cut cookies into eighths or coarsely chop.
Add cookies to chocolate mixture.
Stir to combine.
Remove plastic insert from chocolate crumb crust.
Spoon filling into pie.
Sprinkle additional chopped cookies over top.
Place eight cookies evenly around the circumference of the pie. Freeze 6 hours before serving.

Cowboy Cookie Chocolate Pie
Equipment
- 1 large mixing bowl
- 1 whisk
- 1 wooden spoon
- 1 sharp knife to chop cookies
- measuring cups
Ingredients
- 12.4 oz. pkg. Cowboy cookies divided use
- 1 1/2 cups half-and-half
- 5.85 oz. pkg. instant chocolate pudding mix (dry)
- 8 oz. container cool whip or other non-dairy frozen whipped topping, thawed
- 9 inch chocolate crumb crust
Instructions
- Reserve eight Cowboy cookies for garnish; set aside.
- Cut 10 cookies in eighths to equal about 1 ½ cups cookie crumbs.
- Set aside.
- Combine pudding with half and half and whisk vigorously for two minutes.
- Fold in Cool Whip topping.
- Stir in Cowboy cookie crumbs.
- Pour chocolate mixture into chocolate crust.
- Line the outside edge of the pie evenly with the eight whole Cowboy Cookies.
- Chop two more Cowboy Cookies and sprinkle crumbs over top.
- Freeze for six hours before serving.
- Remove from freezer 10-15 minutes before serving.

Can you use whipped cream instead of the Cool Whip? Also, do you serve the pie frozen or defrost a little?

Hi, Jane. If it’s only frozen 6 hours you can serve immediately. If it’s frozen longer than that, you will have to defrost about 20-30 minutes. I’ve not used whipped cream. I’m not sure how it will turn out.
