Unicorn Cookies
Have you seen the adorable new Unicorn Chips that Nestle’s has put out? I couldn’t resist buying a couple of bags and turning them into these delicious Unicorn Cookies. They have vanilla chips in pink and blue colors swirled through them. They are so cute and make up into a batch of the best cookies ever.

My husband suffered a stroke in early June. After hospitalization and rehab, he began a 12-week long Day Neuro program in August. I’ve been sending in sweet treats every Monday for the staff. Unicorn Cookies were some of the first ones I sent in and they were raved over by all the workers in the department. It’s weeks later now, and I still get rave reviews from these cute little cookies. 🙂
These scrumptious cookies pack a delicious vanilla-flavored crunch. They’re not all that difficult to whip up either. Give Unicorn Cookies a try during the holidays or for a special birthday bash. Everyone will love you for them. Hahaha.

Unicorn Cookies are wonderful for birthday parties or Christmas Cookie Exchanges.
These are also terrific for tailgating parties or potlucks.
Here’s what I did.
I used these ingredients.
Soften butter. Add eggs, sugar, brown sugar, baking soda, salt and vanilla.
Cream ingredients with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. (Bleached flour toughens baked goods). Add Unicorn morsels.
Stir ingredients to combine.
With a large cookie scoop, scoop cookie dough and place about three inches apart on greased cookie sheets.
Bake cookies at 350 degrees about 12-14 minutes or until lightly browned. Rotate cookies on racks after six minutes of baking time.
The Day Neuro staff loved these cookies.

(My own concoction)
Unicorn Cookies
Equipment
- 3 18x26" cookie sheet pans
- 1 spatula
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 1 1/4 cup cookie scoop
- measuring cups
- measuring spoons
Ingredients
- 1 1/2 cups unsalted butter softened
- 1 1/2 cups light brown sugar firmly packed
- 3/4 cup granulated sugar
- 3 large eggs
- 2 tsp. real vanilla extract
- 4 cups UNBLEACHED all-purpose flour (Bleached flour toughens baked goods)
- 1 1/2 tsp. baking soda
- 1 tsp. sea salt
- 20 oz. pkg. Nestle Toll House Unicorn morsels (vanilla flavored) (two 10-ounce packages)
Instructions
- Preheat oven to 350°.
- Grease or spray large cookie sheets with cooking spray.
- In large bowl, combine butter, sugars, vanilla, eggs, salt and baking soda.
- Beat at medium speed with an electric mixer until fluffy.
- Stir in flour and Unicorn morsels with a wooden spoon until well combined.
- Scoop dough with a large cookie scoop and place cookies 3-inches apart on prepared cookie sheets.
- Bake for 12-14 minutes at 350°, or until lightly browned.
- Rotate cookies on racks every six minutes during cooking time.
- Let cookies cool in pan for 2 minutes.
- Remove to wire racks to cool completely.

Instead of the chocolate chips we used sprinkles and they are definitely delicious 😋 you should try it
