Spicy Creamed Corn

We loved the way this Spicy Creamed Corn turned out. The nice thing about this recipe is it uses only 5 ingredients. It takes about 10 minutes to toss together. It’s really wonderful for a quick weeknight side dish. This is also a great side dish for holidays and company since it’s gluten free so almost anyone can eat it.

Spicy Creamed Corn is really a delicious way to enjoy corn. It uses cream cheese as the base. Then it includes diced green chilies, green onions and bell pepper to give it a little zip and pop in flavor. I served it to my son and his wife along with Italian Chicken so it was a very simple and easy meal to throw together.
This is a tasty corn recipe for any occasion including potlucks, backyard barbecues or regular weeknight dinners. I ate about three servings myself and loved this scrumptious corn dish. If you enjoy a little Tex Mex in your side dishes, this recipe is sure to win you over.

Every bite of Spicy Creamed Corn is mouthwatering and irresistible.
Here’s what I did.
I used these ingredients.
Cube cream cheese and put in a saucepan over medium heat.
Whisk cream cheese until softened and melted.
Add corn, diced green chilies, red bell pepper and diced green onions.
Stir ingredients to combine and heat through.
Remove corn to a serving bowl to serve.
Spicy Creamed Corn is delicious with Italian Chicken and fresh fruit.
This easy recipe is also gluten free.
The green chilies and green onion add a little pop and zest to this creamy side dish.

Spicy Creamed Corn
Equipment
- 1 large sauce pan
- 1 whisk
- 1 wooden spoon
- 1 sharp knife to chop vegetables
- measuring cups
- measuring spoons
Ingredients
- 4 oz. cream cheese cubed
- 15.5 oz. can whole kernel corn drained
- 4 oz. can green chilies diced
- 1/4 cup green onions sliced
- 1/4 cup red bell pepper chopped
Instructions
- In a saucepan, heat the cream cheese until melted, whisking constantly.
- Add the corn, chilies, green onions and red bell pepper.
- Cook and stir until heated through, approximately 3-5 minutes.
