Rainbow Chip Peanut Butter Cookies
Rainbow Chip Peanut Butter Cookies are awesome. Really. These amazing Peanut Butter Cookies are filled and topped with rainbow chips for an explosion of flavor and deliciousness. They start with one of my favorite Peanut Butter Cookie recipes and add loads of Rainbow Chips. Yummy doesn’t do justice to these jewels.

My husband underwent a 16-week out-patient rehab program after his stroke. It was a grueling 5 day program. It took up about a whole day once you considered drive time to and from our house to Dallas. Every week I tried to send in treats for the Day Neuro staff.
I had purchased several bags of these rainbow chips in May and knew I needed to use them up. I made up Rainbow Chip Blondies as well as these cookies with all those bags. The Day Neuro staff loved these cookies. Peanut Butter Cookies always rate highly, but these cookies are definitely amped up a notch.

These cookies are terrific for Christmas Cookie Exchanges.
These amped up Peanut Butter Cookies include loads of Rainbow Chips. Yum.
Here’s what I did.
I used these ingredients.
Soften butter. Add crunchy peanut butter, sugar, brown sugar and eggs.
Mix with an electric mixer until smooth.
Add salt, hot water, baking soda and vanilla.
Mix ingredients again until smooth.
Add UNBLEACHED all-purpose flour. (Bleached flour toughens baked goods). Add Rainbow Chips.
Stir ingredients well until thoroughly combined.
Grease cookie sheets. Scoop dough with a small cookie scoop and place about two inches apart on prepared cookie sheets.
Place cookie dough on prepared cookie sheets.
Place 4-6 rainbow chips on the top of each cookie. Freeze cookie dough on cookie sheets for about 10 minutes.
Bake at 350 degrees for 12 to 15 minutes. Rotate cookies on racks every six minutes during baking time.
These cookies are wonderful for tailgating parties and potlucks.

RAINBOW CHIP PEANUT BUTTER COOKIES
(My own concoction)
Rainbow Chip Peanut Butter Cookies
Equipment
- 3 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 spatula
- 1 small cookie scoop
Ingredients
- 1 cup light brown sugar packed
- 1 cup granulated sugar
- 1 cup extra crunchy peanut butter
- 3/4 cup unsalted butter
- 2 large eggs
- 1 tsp. vanilla extract
- 1/4 tsp. sea salt
- 1 tsp. baking soda
- 2 tbsp. hot water
- 2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 15 oz. pkg. 10-oz. Yum-mallow Rainbow Chip Morsels (or one and a half 10-ounce bags Yum-mallow Rainbow Chip Morsels)
Instructions
- Mix brown sugar, granulated sugar, peanut butter, butter and eggs with an electric mixer until smooth.
- Add vanilla, salt, baking soda and hot water and mix again until well blended.
- Stir in flour and one package Rainbow Chip Morsels with a wooden spoon until combined.
- Stir thoroughly; this may take 4-5 minutes.
- Drop with a small cookie scoop onto cookie sheets that have been sprayed with cooking spray.
- Press additional Rainbow Chip Morsels into the tops of each cookie.
- Freeze on cookie sheets about 5-10 minutes.
- Bake at 350° about 12-15 minutes or until done.
- Rotate cookies on racks every 6 minutes while baking.
- Cool completely.
