John has been at a Day Neuro rehab clinic for the past several months. I’ve been sending in cookies every Monday morning almost the entire time. His main physical therapist told him her favorite cookies were Chocolate Chip Oatmeal Cookies. So since I didn’t have an actual recipe for this, I made up one on the fly.
Oh, were these cookies ever well received! Everyone loved them. I ate several of them myself and saved out a few for John too. Yes, we ate way more than we should have. 🙂 These cookies are also fairly easy to whip up. There are no difficult steps and each batch makes over six dozen cookies. Yum. I also made up a version with peanut butter that were also fantastic.
Chocolate Chip Oatmeal Cookies are perfect for Christmas Cookie Exchanges, tailgating parties, soccer games or practices or even potlucks. Even though this makes a huge batch of cookies, you’ll find these goodies scarfed down in no time. They’re that good. Yessiree!

This recipe makes around six dozen cookies, so if you need to make a lot for a party or game, this is the recipe!
Here’s what I did.
I used these ingredients.
Soften butter. Add sugar, brown sugar, vanilla, eggs, baking soda and salt.
Mix with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add oatmeal and chocolate chips.
Stir with a wooden spoon to combine.
Spray cookie sheets with cooking spray. Roll cookie dough into balls and place on greased cookie sheets.
Bake at 350 degrees for 12-15 minutes or until done. (My cookies took 18 minutes to cook completely.) Rotate cookie sheets on baking racks every six minutes while baking.
These gooey cookies are everything you could ask for.

CHOCOLATE CHIP OATMEAL COOKIES

Chocolate Chip Oatmeal Cookies
Equipment
- 3 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
- 1 cup unsalted butter softened
- 1 cup light brown sugar packed
- 1 cup granulated sugar
- 2 large eggs
- 2 tsp. vanilla extract
- 3 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1 tsp. baking powder
- 1 tsp. sea salt
- 1 1/2 cups rolled oats
- 24 oz. bag semi-sweet chocolate chips (two 12-ounce bags)
- 1 tsp. baking soda
Instructions
- In a medium bowl, cream butter, sugars, eggs, vanilla, baking powder, baking soda and salt with an electric mixer until smooth.
- Stir in flour, oats and chocolate chips with a wooden spoon until ingredients are well incorporated.
- Stir thoroughly; this may take 4-5 minutes.
- Roll mixture into balls and drop onto lightly sprayed cookie sheets.
- Bake at 350° for 12-15 minutes or until done.
- Rotate cookie sheets on oven racks every six minutes of baking time.
- Cool completely.

The recipe calls for baking powder but the instructions say baking soda . Can you clarify?

Hi, Donna. Thanks for bringing this to my attention. I recently changed over my recipe plug in and now I’m realizing everything didn’t come in correctly with many items missing. Unfortunately that means looking through over 1,700 recipes! 🙁 This recipe uses both baking soda and baking powder. I’ve changed the recipe card to reflect that. Sorry for the inconvenience.
